Pesto Chicken Salad.

I just made my Chicken Salad for Lunch tomorrow and decided to get a bit creative. Its quite yummy. I dont know the calorie counts on it but i cant imagine its terribly high.
1 pouch or can of Chicken Breast
1/2 a cup of Fat Free Sour Cream ( or light mayo would work)
some diced onion
some diced celery
a handful of almonds chopped up
and 1 TBL spoon of Pesto ( i used classico)
Im going to put it on 12 grain wheat bread and have a tasty sammie tomorrow.. Crackers would also be good too!

YOu can totally figure out the calories, go to Food tab, go to recipe and add new recipe and put everything you put in.. Than figure out how many servings there is and how much is in a serving and MFP does the rest.. That is why this site is so great!!!!0

Thanks for sharing the cool idea, love me some pesto ;o) I think I'll try a chicken breast cut up. Love the crunchy effect you gave it with the nuts, healthy and a nice touch!
I bet grapes or diced apple would be tasty in it too. Hm... the possibilities are endless...
EDIT: mmm I might swap out the almonds one time and toss in some pinenuts as they are tasty with Pesto!0 -
