Lite Spinach Dip

ingredients
16 ounces fat-free sour cream
8 ounces fat free cream cheese
10 ounces frozen spinach
1 envelope onion soup mix
1/4 cup water chestnuts, chopped
1/4 cup red onion, chopped

directions
Thaw spinach and squeeze out moisture. In a large bowl, combine all ingredients. Chill and serve with pitas or crackers, or in a hollowed out loaf of bread.

    I make that exact dip, but with low fat cream cheese and sour cream, and serve it in a hollowed out round bread loaf, with the bread innards for dippers. Hugely popular.

    I want to try this but with a mix of fresh and frozen spinach...so much fresh spinach in the fridge right now! Yum.

    If you've got heaps of fresh, you don't even need the frozen, just wilt the fresh in a frypan with some water and squeeze it well when it's cool :)

    Thank you! I was contemplating pulsing it in my food processor, but wilting it sounds 100% better and less messy!

    Same! I feel like it could almost be in one of those fancy sandwiches you have with tea. Or an insanely awesome veggie wrap!
