Anyone have a good recipe for this? I am using ground turkey meat with new potatoes on top. Thanks!

  • use carrots instead of corn. purree the carrots.

    I chop up carrots and parsnips and onion and cook them with the meat until they are soft. Sometimes I add in corn.

    Also good substitutions:

    mashed cauliflower instead of potatoes on top.

    I also add lots of mushrooms, which allows me to use less beef or lamb or turkey

    Worcestershire is your friend, although it is high in sodium.:flowerforyou:

    this is the recipe I normally use, although I do not use as much butter/oil. You could easily sub in ground turkey.

    Here's a delicious one that I make. I double or triple the recipe accordingly. I've also entered it in the database under Homemade - Carb Craving Shepherd's Pie

    Carb Craving Shepherd’s Pie (Serves 2)
    10 ounces lean ground turkey
    1 tbsp extra virgin olive oil
    2 or 3 cloves of garlic
    1 cup frozen peas and carrots
    1 cup mashed sweet potato
    1 onion chopped
    ¼ tsp thyme
    1 tsp sea salt
    1 tbsp spelt flour
    1 tsp Worcestershire sauce
    1 cup vegetable stock
    Bake 2 large sweet potatoes.
    On the stove top cook ground turkey, garlic and onions in oil until turkey is lightly
    browned. Add salt, pepper, thyme and flour. Blend well. Stir in vegetable stock. Cook
    until thickened. Stir in Worcestershire sauce and peas and carrots. Cover and simmer for
    20 minutes.
    Remove sweet potatoes from oven once cooked. Scoop out the filling and mash with
    one tsp butter. Spread mashed potatoes on top of turkey mixture. Bake at 400 degrees
    for 15 minutes.

    Per serving: 413 calories, 43g carbs, 13g fat, 31g protein.

    I make mine with ground turkey. I make the 'gravy' with a little bit of low-sodium chicken broth, and I use mashed cauliflower instead of mashed potatoes.

    My sister added sliced tomatos, mushroom, corn and spinach under the potato's. If you dont steam the spinach first its realy juicy but sooooo good. Weve also had peppers.

    Here's that recipe I promised! I substituted Simply Ground (soy meat) in the place of the ground sirloin just to try it out and it turned out great too!


    Yield: 4 servings (serving size: 1 cup)

    Ingredients
    2 cups prepared mashed potatoes (such as Simply Potatoes)
    3/4 pound ground sirloin
    3/4 cup picante sauce
    1/3 cup water
    1 tablespoon ground cumin
    2 teaspoons sugar
    1/8 teaspoon salt
    1 (15-ounce) can kidney beans, drained and rinsed
    1/2 cup (2 ounces) preshredded reduced-fat extra sharp cheddar cheese
    Preparation
    Prepare mashed potatoes according to package directions; keep warm.

    Cook beef in a large nonstick skillet over medium-high heat until browned, stirring to crumble. Stir in picante sauce, water, cumin, sugar, salt, and beans; bring to a boil. Reduce heat; simmer until mixture thickens (about 5 minutes).

    Remove from heat. Spoon mashed potatoes over meat mixture, and sprinkle with cheese. Cover and let stand 2 minutes or until cheese melts.

    Kitchen Notes

    Prepared mashed potatoes are found in the refrigerated section of larger grocers. They only need a few minutes in the microwave to reheat.
