Ratatouille!

Just made myself a massive pan of ratatouille. I loooove ratatouille, but I haven't bothered cooking it in about four years because of living with a guy who hates both aubergine and courgettes (okay, eggplant and zucchini, translated to American).

Lost track of the weights while cooking so I've had to use estimates, but...... you guys, I think I worked out part of how I put on 18lbs since we got together :laugh: Massive bowl of ratatouille with a serving of cod fillet.

I actually added two slices of bread that I didn't plan until I saw how low the calories were turning out, and it's still under 400cals. I used to eat that at least once a week before he moved in.... hah! :drinker:

    Err before you get too carried away with what good calories it is people normally totally underestimate the weights of things so I really wouldn't totally trust your calories. If it is off one day won't destroy anything I would just make sure next time you weigh everything.

    Yeah it's super low cal, it's a real pain to estimate though. I made a massive pot and tried to figure out how much it weighed... too heavy for the scale... so I tried to put it in cups to see how many cups there were... ended up way off once I added them up. It's not very MFP friendly, which puts me off, but otherwise it's delicious and healthy. I need to make it again.

    Yeah, I know - I had the weights all saved in a sticky note on my desktop which I deleted somehow by mistake when I went to divide it by 4 to log. I remembered some of the amounts but not all :grumble: But I knew the exact amounts of cod, oil and packet items, so there's that - it's just the veggies I forgot.
