Healthy Easy Meals?

Hey Guys.

I feel like I have been eating the same few meals on a rotation. Any suggestions for quick easy healthy meals? I try to do three main meals and then two snacks. No simple carbs. Any suggestions would be greatly appreciated! Thanks!

    Look up clean eating in google it has some nice healthy recipes I have one on my blog from last night that was delicious. Pinterest is my always go to for healthy recipes too.

    I'll have this with some quinoa, and I bet it would be good with sweet potatoes.

    My dad used to make a rosemary chicken that was delicious, just chicken breasts with butter and rosemary, baked. I keep meaning to make this myself.

    I like to make a caprese salad for a snack, very easy.

    Crustless Quche

    Makes 6 servings
    8 slices bacon
    4 ounces shredded Swiss cheese
    2 tablespoons butter, melted
    4 eggs, beaten
    1/4 cup finely chopped onion
    1 teaspoon salt
    1/2 cup all-purpose flour
    1 1/2 cups mik

    Quiche is easy because you essentially dump it into a bowl/ container of some sort and bake.

    BBQ Meatloaf Muffins: 6 Servings

    1lb lean ground beef
    1.5 cup oatmeal
    1 egg
    1 cup BBQ Sauce (I used Sweet Baby Ray’s Sweet and Spicy)
    1 cup shredded carrots
    1/4 cup shredded onion
    Salt & Pepper

    Mix all the ingredients together then take a small ball of meat and microwave for 15-20 seconds and taste test it once cooked to see if you need any more salt and pepper. Separate the meatloaf mix into 12 balls and place into greased muffin tins, filling the muffin tin completely (I had an over sized muffin tin so I was able to make it into 6 large muffins) Cook at 350° for ~30 min until meat is cooked thoroughly – mine took 45 minutes as I had twice as much meat in each tin. For a little something extra spread a tablespoon of BBQ sauce on top of the muffins in the last 5 minutes of cooking.

    Here is a sample of my day:

    breakfast: bulletproof coffee- coffee blended with grassfed butter, a dash of almond milk, cinnamon and liquid sweetener.

    am snack: hard boiled egg, bacon or pepperoni
    green smoothie: avocado, mixed greens, almond milk, vanilla and cinnamon YUM!

    Lunch: mixed greens, 5 green olive, protein (chicken legs, beef roast, tuna, ground pork from stir fry) and a handful of a different veggie (red cabbage, mushroom, zucchini, cauliflower) and healthy fat, either olive oil drizzled over and mustard drizzled for flavor or I'll make a mustard salad dressing with olive oil.

    PM snack: nuts usually almonds with either cashews or macadamias. Smoothie listed above if I didn't have it then. Bone broth is good too.

    Dinner: Steamed green veggies, broccoli, green beans, or cauliflower usually. Protein, something different than lunch. If lunch was red meat, we'll do white meat or seafood for example. Also a healthy fat either avocado or olive oil. I cook with coconut oil so that's in there too.

    I should also say that I am following a ketogenic way of eating, meaning low carb, moderate protein and high fat. Please just use this example I gave you as a place to start for suggestions! If you are interested in keto, message or friend me for more info! I just like sharing food info to help people! Spices are your best friend! They can help make something that might be bland into something amazing!!! Just get some and play around with them! I'm here if you want more suggestions! Good luck!

    I have the same thing for breakfast every day: two fried eggs. You can always boil the eggs if you are worried about the butter. I have noticed that a nice dose of protein in the morning (and eggs are super cheap and easy to cook) really helps keep down hunger until lunch time.

    A great simple dinner is to chop up half an onion, some red peppers, and add some frozen broccoli and shrimp in a hot skillet with some garlic and soy sauce for a quick stir fry. This can be eaten as-is, or over brown rice, quinoa, or bulgur wheat as desired.

    If you have stainless steel cookware, another good way to go can be to make braised chicken. Just heat your oven to 350 deg F, then load up the pan with some diced onions/garlic/shallots and some chicken breasts or thighs. Season with a pinch of salt and maybe a dash or two of pepper, cover with the pan lid, and put the whole thing in the oven for 30-40 minutes (if cooking for one or two people). Delicious and easy!

    And don't forget to rely heavily on fresh or frozen green veggies. The freezing process these days is really good, and frozen veg is just as nutritious as fresh. A quick toss with a dash of lemon juice, low-sodium soy, or a touch of garlic salt may be just what you need to have a mound of tasty green veggies. I also advocate roasting green veg like broccoli or brussels sprouts under the broiler with just a tiny touch of oil. It browns and crisps the edges and makes them pretty much irresistible.
