Chicken Cacciatore

1 Tbsp. olive oil
2 lbs. skinless chicken legs and thighs
1 jar or can of pasta sauce your choice
3 cups hot cooked rice
heat oil in 12-inch skillet over medium heat and brown chicken stir in sauce bring to a boil over high heat reduce heat to low and simmer covered 45 minutes or until chicken is thoroughly cooked serve with hot rice

    I use this version which has tinned tomatoes rather than pasta sauce (so less extra rubbish) but add mushrooms and carrots so it's got some veg in it other than tomatoes. I think I sometimes add wine too, so it ends up quite bourgignony in terms of the flavours added. I've made it with a whole jointed chicken (as per the recipe) or with chicken thighs.

    Haven't made this for a while actually, definitely going on my list!

    Growing up, this was my family recipe

    chicken pieces
    potatoes, quartered
    onions, quartered
    carrots, cut into sticks
    celery, cut into sticks
    jar of fave spaghetti sauce
    italian seasonings (basil, oregano,)

    Put everything into roaster/casserole dish. Pour sauce over top along with herbs. Bake at 350 for 1.5 hours.
