Vegetarian: Seitan/Fake Chicken Recipe?

So I'm getting pretty tired of the expensive, but oh so delicious MorningStar Farms fake meat. I found a couple recipes for fake burgers using blackbeans and lentils that I want to try this weekend. But I'm not sure how to make fake chicken. I've seen people mention about Seitan, and was wondering if anyone had a homemade recipe for it? (easy to make with minimal ingredients). Thanks! :)

Also, looking for more vegetarian friends on here

My fiance makes a big batch of seitan every weekend, though he isn't a vegetarian. I'm not sure his exact recipe but I know that he mixes the gluten powder with water to make a dough ball then separates that into smaller balls (he weighs them so they're all the same portion), and he cooks them in a pot of boiling water with beef or chicken bouillon cubes for flavoring. Though since you're vegetarian the bouillon cubes might be off limits. Maybe you could add flavor to the dough with seasonings like garlic or onion powder. I do know that when I've eaten it the texture isn't too far off from chicken! He usually makes them chopped up into a pasta dish.

Thanks redwngs :) I could always use vegetable broth. I'll have to look more into this :)
