Banana Bread for Snacks

This is a lovely recipe. I cut this into 10 slices and each slice works out to be 212 calories. More slices you can get out of this loaf the less calories.


Ingredients
2 cups whole wheat flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sugar free applesauce
3/4 cup honey
2 eggs, beaten
3 mashed overripe bananas

Directions
1. Preheat oven to 175 degrees C. Lightly grease a 9x5 inch loaf tin.
2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, mix together applesauce and honey. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf tin.
3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Enjoy this! Great for school lunches... though it never gets that far!

    Great idea to use apple sauce. I just made a loaf of banana bread yesterday but used stevia to sweeten it. I bet this would be even better, thanks for posting it.

    Yum :-) Ever made them into muffins instead (or even mini muffins)? Can't think why it wouldn't work but I think it would make portion control easier.

    You can make muffins using this recipe. I would suggest baking for 12 minutes then check whether it is still moist in the middle. Continue baking, checking regularly until skewer comes out clean. :happy:

    I have one cooking in oven. Have had to tweak as didn't have as much honey as I thought. Will let you know if it works.

    This sounds awesome! I ran it through caloriecount.com and came up with 183 calories per serving (10 servings in a loaf). However, it did make me convert the applesauce to grams (55), so maybe that changed the calories. Either way, I'm gonna' try this recipe. Maybe I'll cut the calories a bit more by using Egg Beaters. YUM! Thanks for sharing!
