Deliciously creamy Shepherd's Pie!

It's not authentic, but it is delicious! Here's this Irish girl's take on a classic recipe. The following measurements are for the batch I made last week, and it made six servings.

Ingredients for the potatoes:
22 ounces of red potatoes, skin left on (this was around 5-6 decent sized potatoes for me)
4 tablespoons of Philadelphia - Whipped Cream Cheese With Chives 1/3 Less Fat
1 tablespoon of butter, unsalted
Salt and pepper to taste

Ingredients for the hamburger:
93% lean beef
1-2 cloves chopped garlic, 1/2 of a yellow onion
Oregano, basil, garlic powder, salt, and pepper to taste

Additional ingredients:
1 can of salt-free golden kernel corn
2 ounces of American cheese (this was four slices for me, since I had it sliced thin at the deli)


Instructions:
Boil your potatoes, and mash them. Optional is a splash of skim milk along with your cream cheese and butter. Season to your liking, and set aside. Cook your beef until done; drain the fat, and layer it in the bottom of your pan. Top with the drained corn, followed by your potatoes.

Bake for around 20 minutes in the oven. Then, arrange your cheese on top, and put it back in until cheese is melted and bubbly.

Per serving, here were the macros (which fit perfectly for me, and justified me eating this every day..sometimes multiple times per day! Lol)

Calories: 325
Carbs: 28g
Fat: 14g
Protein: 22g
Calcium: 11g

    Interesting. I tend to include a bunch of additional veggies in my Shepherd's pie, like peas and carrots, and sometimes some sort of neutral tasting bean, like butter or baby limas or french greens. I think it greatly increases the nutrition content.

    I didn't realize it could be so low-cal! Now that you've posted this, it made me think it could probably get even leaner if you used ground turkey instead of beef (throw some minced mushrooms in there to moisten it up and for flavour), corn, (or peas, carrots, beans, whatever you like in the centre), and for the mashed potatoes, greek yogurt! I frequently use greek yogurt in replace of sour cream. It tastes pretty well the same, and has the same texture! I'm gonna try that this weekend! Thanks for the tip!

    No problem! I like to experiment with this, since it's such a versatile recipe. Hence me testing out a family member's recipe for mashed potatoes for the potatoes used in this recipe! And sour cream in potatoes is awesome, so I can only imagine how awesome Greek yogurt would be for this!

    Yes!! It's an "aggregate accessory fruit," whatever that means. So it has more in common with figs and pineapples, apparently (which, brace yourself....are not apples!)
