Does anyone have any good receipes for salads to change things up every once and while. I use alot of Zesty Itallian fat free dressing on fresh vegetables for marinade which i love, but wondering if there are some other good ideas out there?

I just found this recipe but haven't tried it yet. It sounds delicious though. If you try it, let me know how it is!
Pacific Sizzle Salad
Serves: 6
Tired of the same green leafy salad?
INGREDIENTS
1 (11-oz.) can mandarin orange segments, chilled and drained
1 mango, peeled and cubed
1 medium avocado, peeled, pitted and cubed
1 medium cucumber, peeled, seeded and cubed
1 red bell pepper cut into thin strips
3 tablespoons lime juice
2 tablespoons ginger flavored soy sauce
1 tablespoon stir fry sauce
2 tablespoons brown sugar
2 tablespoons minced red onion
2 tablespoons minced cilantro
DIRECTIONS
1. In large bowl, toss together mandarin oranges, mangos, avocado, cucumber and bell pepper with lime juice.
2. Combine remaining ingredients for dressing small bowl; blend well and toss gently with mandarin orange mixture.
3. Stir in cilantro and serve immediately.

I love mixed greens, grapes, pineapple, grilled chicken with a small amount of ranch (just a drizzle )and fat free raspberry walnut vinegarette. its a very refreshing salad and healthy too!0

greens with orange slices, red onion, sesame seeds and a citrus dressing or rice vinegar.
I love salad, and luckily my kids do to. I just add different things like jicama, strawberries, nuts etc.
Another is roasted chicken with grapes, apples and almonds, usually this calls for lots of mayo but I use a bit of olive oil and rice vinegar and you can eat it just like that or on greens.
experiment with flavors, you just might surprise yourself!0 -
I make a similar one with:
chicken breast
spring mix greens
red onions
apple slices (a tart apple tastes best)
slivered almonds
goat cheese (1/4 of a "stick")
Girard's Light Champagne dressing
You can also use dried crunchy apples as a topping and slice up some pear in it as well. It is very satisfying and delicious too! I have counted the calories of each individual item and added this recipe to the food list. I call it "Spa Salad" because the first time I had it I was at a spa and I loved it so much that I memorized the ingredients before I left.

Chinese Chicken Salad
1 head cabbage chopped to bite size pieces
1 pkg top roman noodles crushed
3 green onions
1 can water chestnuts-chopped
1/2 bag honey roasted sunflower seeds
As much or as little chicken as you want-chopped
Dressing
1/3 cup seasoned rice vinegar
3/4 cup canola oil (never tried with olive oil)
1 top ramon seasoning packet. I like the beef one.
sugar-start with 1/4 cup mix real well. The sugar will thicken the dressing. ( never tried splenda)
Taste should be sweet.
Pour over salad and let set in fridge for a couple of hours
I have not figured out the nutritional facts, but it is a salad I only make a couple times a year, and I would change it.0 -
Think:
greens
dried or fresh crunchy fruit
nuts
feta or gorgonzola- a strong cheese - that way you only need a little
onions if you like them
can add chicken or tofu
can add broccoli, asparagus, whatever you think of
mix and match. I don't use dressing, but a balsamic type dressing would work.0 -
Have you ever tried Jicama? It is really low in calories and delicious (1/2 cup has 25 calories, no fat and lots of fiber). Very crunchy and good. I make a Jicama Slaw that is great:
1 large jicama, peeled and finely shredded
1/2 Napa cabbage, finely shredded
1 carrots, shredded
1/2 cup freshly squeezed lime juice
2 tablespoons rice vinegar
2 tablespoons honey
1/2 cup canola or grapeseed oil
Salt and freshly ground black pepper
1/4 cup finely chopped cilantro leaves
Put the jicama, cabbage and carrots in a large bowl. Whisk together the dressing ingredients, salt and pepper to taste and toss. Let is stand for about 15 minutes before eating.

HG's Southwest Salad McSwap!
Ingredients:
For Marinade
1/2 tbsp. honey
1/2 tbsp. lime juice
1/2 tbsp. yellow mustard
1/4 tsp. cilantro
For Salad
3 cups chopped lettuce
4 oz. cooked boneless skinless lean chicken breast; sliced or chopped
1/4 cup halved cherry tomatoes
1 1/2 tbsp. chopped poblano pepper (or any mild green pepper)
1 1/2 tbsp. canned sweet corn kernels
1 1/2 tbsp. canned black beans
2 tbsp. shredded fat-free cheddar cheese
3 Baked! Doritos; crushed
For Dressing
2 tbsp. fat-free ranch dressing
1 tbsp. fat-free sour cream
1/4 tsp. apple cider vinegar
1/4 tsp. lime juice
1/4 tsp. chili powder
dash onion powder
dash garlic powder
dash cumin
Directions:
Mix together marinade ingredients in a small bowl -- add chicken and coat it in the marinade. Set aside. In a pan spritzed with nonstick spray, cook tomatoes and corn over high heat until slightly charred. Place lettuce in a bowl, and top with marinated chicken, tomatoes & corn, chopped pepper, and black beans. Sprinkle with cheese and chips. In a small dish, combine all of the dressing ingredients with 1 tsp. water. Serve dressing alongside salad for easy dipping. Enjoy!
MAKES 1 SERVING
