No bake granola bars

One of my favorite Youtubers has a channel called "Divas Can Cook", and she has an awesome recipe for granola bars that I tried out tonight...and they were perfect!

Directions taken from the website:
Ingredients:
4 tablespoons butter
¼ cup honey
¼ cup brown sugar, packed
¼ cup peanut butter
1 teaspoon vanilla extract
2 cups quick cooking (1 minute) oats
½ cup Rice Krispies cereal
1 cup m & m's (I used four crushed up Fun Size packages of M&Ms instead)
1 cup chocolate chips, melted (optional drizzle, I did not include this)
In a nonstick pan over medium-low heat, melt the butter.
Stir in the honey, brown sugar, and peanut butter.
Bring to a very light simmer.
Simmer for 2 minutes.
Remove from heat.
Stir in vanilla extract.
Stir in oats and Rice Krispies until completely coated.
Press mixture into a 8 x 8 inch pan lined with greased parchment paper. Be sure to press down really firm.
Sprinkle the top with m&m's and press them into the mixture.
Refrigerate for 30 minutes or until firm.
Remove from pan and cut into bars with a sharp knife.
Drizzle on the melted chocolate.
Refrigerate until chocolate has set.
Store in the fridge or in airtight container.
Enjoy!
I got impatient and tried one while it was still warm. They were awesome! Currently freezing up the rest. Her instructions say it was for 8 bars, but I cut mine into 12 instead. Each bar (with the brands I used, and without the chocolate drizzle) has 157 calories, 20g carbs, 8g fat, and 2g protein. I really loved this recipe because it was simple, and homemade, rather than prepackaged. It really filled me up, so I think I'm going to enjoy these as an in-between meal snack.
I don't know if anything can be substituted for these ingredients, so tweak the recipe at your own risk!

157 per bar when you cut the into 12! I used a lot of local brands, so the calorie count may be a bit different depending on what you use. But the cal count was definitely a lot higher when it was only 8!0 -
I think I might try it without all the chocolate. I love peanut butter.
I definitely recommend it. The M&Ms were a perfect balance with the actual peanut butter/oat bar; any more, and the recipe would be way too chocolately. I may make a thin chocolate ganache for a few to turn them into a dessert bar, but definitely not with the amount she put in the recipe!0 -

Sounds good! You can mix just about anything into the batter. I want to try a chocolate/peanut butter bottom for my next batch myself.0
