Motivation level depleted

In less than 12 weeks, I went from around 210 lbs to 175-ish. I did it through strength exercise 5x week, cardio 1-2 times/day, 7 days a week, switched to no(low) fat Vegan diet.
210 to 175. For me, that's from an XL shirt to an M.
3 weeks ago, I went jetskiing, and got sunburned from the top of my head to the top of my feet. I couldn't exercise for a week, and outdoor cardio was out of the question.
In that week, I got complacent, then reintroduced foods like Potato Chips to my diet.
Now the thought of 45 minutes cardio seems tedious. I've still lost weight (173-ish), but I can see belly fat moving back in a little, and worry I might be losing a little muscle mass. Magical thinking, I know, for what amounts to a 3 week hiatus.
Is it normal to take a break, and start back again hard? Or is consistency the key? It's not like I was burned out. But maybe I did too much too fast?

I think that depends on the definition of 'normal'. Do SOME people fall off and then hop back on hard? Of course! What matters is what you want from your exercise and diet and for those 3 weeks, you made your choice and now you're making the choice to get back into it. No guilt. No shame. Just get back on that thing.0

I think you did too much too fast.
Consistency is key but sometimes life happens. This is a lifestyle change. It's not something you will be able to stop doing unless you want to be at square one again. Go for the long term goal - it's more sustainable.0 -
The important thing is to come back. Start off a bit easier though since there was probably some loss. You may also want to try something new to re- energize your spirit. If you were primarily doing cardio you may want to try some lifting or crossfit.0
