Whole Wheat Banana Nut Muffins
These are so good. I found the recipe at http://allrecipes.com/Recipe/Whole-Wheat-Banana-Nut-Bread/, but I used applesauce instead of oil, used less salt, added cinnamon, and made mini muffins instead of a loaf of bread.
Ingredients
1/3 cup unsweetened applesauce
1/2 cup honey (I used raw honey)
1 teaspoon vanilla extract
2 eggs
1 cup mashed well ripened bananas (cheetah spotted)
1 3/4 cups whole wheat flour
1 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon baking soda
1/4 cup hot water
1/2 cup chopped walnuts
Directions
Preheat oven to 325 degrees F (165 degrees C).
In a large bowl, mix applesauce and honey together. Add eggs, and mix well. Stir in bananas and vanilla. Stir in flour, cinnamon and salt. Add baking soda to hot water, stir to mix, and then add to batter. Stir in the chopped nuts. Spoon batter into lightly oiled mini muffin pans (I used Pam).
Bake for 15-20 minutes. Makes 40 mini muffins (missing a few in the pic because my dad and my dog snagged them before I had a chance to get the camera. You have to be fast in my house!)
