I have never heard of a low carb cookie or brownie that taste good. Not saying it isn't out there, but hey, some people believe in bigfoot too.0

Peanut Butter Chocolate Chip Blondies
16 servings. Per serving: 151 Calories; 13g Fat (73.7% calories from fat); 5g Protein; 6g Carbohydrate; 2g Dietary Fiber; 34mg Cholesterol; 148mg Sodium.
Ingredients:
1 cup almond flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup peanut butter
1/4 cup butter, softened
1/2 cup Swerve Sweetener
2 large eggs
1 tsp vanilla extract
1/4 tsp liquid stevia extract
1/2 cup sugar-free chocolate chips
Instructions:
Preheat oven to 325F and grease an 8x8 inch square baking pan.
In a medium bowl, whisk together almond flour, baking soda and salt.
In a large bowl, beat peanut butter, butter and Swerve Sweetener until smooth and well combined.
Beat in eggs, vanilla extract and stevia extract until well combined.
Beat in almond flour mixture until fully incorporated and then stir in chocolate chips.
Spread mixture in prepared baking pan and smooth the top with a knife or an offset spatula.
Bake 15 to 20 minutes (less for a gooey consistency, more for a cakier consistency), until top is lightly browned and just set.
Remove and let cool at least 25 minutes before cutting and serving.0 -
Chocolate Covered Cheesecake Bites
Ingredients:
For the crust:
1 cup almond flour
1/2 cup golden flax seed meal
3 Tbsp powdered sweetener
1/2 tsp cinnamon
6 Tbsp melted coconut oil
For the filling:
16 oz cream cheese, softened
1/2 cup coconut cream
3/4 cup powdered sweetener
1 tsp vanilla
For the chocolate covering:
5 oz stevia sweetened chocolate
3 Tbsp butter
Directions:
In a medium bowl, combine the almond flour, flax seed meal, sweetener, and cinnamon. Add the coconut oil and stir to incorporate. Press the crust into a 9″ x 9″ dish and refrigerate for 30 minutes.
In a large mixing bowl, beat the cream cheese, coconut cream, sweetener, and vanilla until smooth. Top the crust with an even layer of the cheesecake mixture and freeze for 1 hr and 30 minutes.
Cut the cheesecake into 28 even rectangles and freeze the rectangles for 30 minutes.
Melt the chocolate and butter in a double boiler.
Dip the cheesecake into the chocolate (or drizzle each cheesecake bite with chocolate) and set on parchment paper. Refrigerate or freeze until the chocolate has set.
Makes 28 bites

Sub out the sugar for Stevia or Splenda.
I tried these with Splenda and it was pretty decent. Not as good as normal peanut butter cookies, but they sure filled that void when I had a craving.0 -

Chocolate Chip Clouds
Light, airy and chewy with chocolate chips in every bite. These cookies are a must for Santa, we've been making them for years and everyone loves them. Made with egg whites, sugar and chocolate, they are very light, gluten free and just melt in your mouth.
The perfect chocolate treat, and when you make them the night before, they are chewier the next day, which is just how I like them. Hope you enjoy and wishing everyone a Merry Christmas!

Servings: 30 • Serving Size: 1 cookie • Old Points: 1 pt • Points+: 1 pt
Calories: 53.7 • Fat: 2.2 g • Carb: 8.4 g • Fiber: 1.7 g • Protein: 1.1 g
Ingredients:
1/2 cup egg whites (room temperature)
1/8 tsp cream of tartar
1/2 cup sugar
1 tsp vanilla extract
2 tbsp unsweetened cocoa powder
1 cup chocolate chips
Directions:
Heat oven to 300°F. Cover cookie sheet with silpat or nonstick silicone pad.
Using a mixer, beat the egg whites and cream of tartar together in large bowl at high speed until soft peaks form. Gradually add sugar a little at a time, then vanilla, beating well after each addition until you get stiff peaks, the sugar is dissolved and the mixture is glossy.
Sift cocoa onto egg white mixture; gently fold until combined.
Fold in chocolate chips. Drop mixture by heaping tablespoons onto cookie sheet. Makes 30 to 32 cookies.
Bake 34 to 40 minutes or just until dry. Cool slightly; remove from cookie sheet. Cool completely on wire rack. Store covered, at room temperature.0 -
