Potluck Dishes for Insulin Resistant Diet
Hello!
I'm going to a potluck in October and there are a few diet needs from the group:
- insulin resistance
- severe peanut allergy (as well as walnut and pineapple I think)
- lactose intolerance
Don't worry, its not all one person. In fact, the lactose one is me haha.
I've found a couple recipes online that would be ok to bring but I'd love to hear from more people, maybe some with those diet restrictions, on what they would appreciate at a potluck. I'd probably like to bring either a main dish or a side dish rather than dessert since I'm a savory food fan.
Ideas? Thanks!

In your situation, I might go with deviled eggs. They're perfect for those with insulin resistance, and don't seem to conflict with the other requirements. If they aren't for you, you could go to allrecipes.com and plug the ingredients you don't want to use into the exclusion list, and do searches for the general types of dishes you'd like to take.0

cut a pack of bacon in pieces, fry to almost done. Throw in a 2 lb bag of frozen, cut green beans. Cook until caramelized, almost burned (this takes a while). We do this at least once a week.
Two packs of frozen (or 2 heads fresh) cauliflower bites spread out on a large cookie sheet. Drizzle with peanut oil. Dust with favorite spices ( I like chicken spice blend and a little cayenne pepper). Cook in hot oven until done/browned/crispy.
Jalapeno popper cauliflower casserole: 2 brick cream cheese, heaving spoonful of Duke's mayo. Mix. Add 1 pack of Oscar Meyer bacon bits, 1 4 oz can of diced green chilies, diced jalapeno to taste, about 1 cup shredded cheddar cheese and 2 packs of frozen cauliflower, cooked and riced. Mix all well. Bake until hot and bubbly in ~350F oven. Add more cheddar cheese last 10 minutes on top if desired.0 -
How would gravy, dill pickles, and mustard fair on an IR diet?0

The gravy has a few tablespoons of starch/four. The gravy could be on the side.0

I'm sorry, don't get me wrong - these sound delicious, but not one of them fits all of the criteria being requested!!0 -
if you want something insanely easy, roast a chicken, let cool, and shred the meat with your fingers. no it doesn't have to be fancy.
take fresh basil, kosher salt, black pepper, and grated parmesan cheese and put it in a food processor. slowly add olive oil to make pesto. the only reason i don't suggest getting it from the store is that this prevents any allergies set off by the pine nuts. mix about 2T of that with 1/2c mayo.
mix chicken and pesto/mayo together. chop a red bell pepper (2 medium OR one large) into a large dice, add to chicken.
alternatively, if you have the time, instead of dicing the bell pepper, get a couple packs of the mini bell peppers. halve them, cut out the seeds, and spoon the chicken salad mixture into them as individual servings.
ETA: sorry, forgot about the lactose intolerance thing. you can forgo the parmesan cheese in the pesto if you need to.0
