Filling low calorie dinner with chicken ideas/recipes

    I've started making stews with chicken, beans/chickpeas and a ton of veg and it's super filling!

    You need:
    Chicken - breast (whole or diced - I prefer diced), thigh, drumstick - your choice!
    Chickpeas and/or beans of any kind (mixed, cannelini, kidney, haricot...)
    Onions
    Garlic
    Veg - I usually add peppers, courgette, aubergine (eggplant), peas
    Tinned tomatoes
    Veg/chicken stock
    Herbs/seasoning - your preference. I usually add chilli, paprika, oregano - You won't need salt because of the stock and if you use chilli you won't need black pepper

    1. Fry off the onions and garlic in a large pan
    2. Add your veg and cook off for a couple of minutes
    3. Add the chicken - you don't need to cook it all the way through as the gentle simmer later will cook the chicken. - If you're using drumticks/thighs/whole breasts you need to brown the meat off in the pan first before you add the veg.
    5. Add the chilli, paprika, oregano (anything else you want to add) and stir
    4. Add the tomatoes, beans/chickpeas and stock - depending on the veg you use they will release a lot of water. There is also a lot of liquid in the tomatoes so you won't need too much stock. Keep checking as it simmers and add more water if you need to.
    5. Season to taste
    6. Simmer for as long as you want - the longer the better. I always aim for 2 hours.

    I always have this dish as it is but you can have it with whatever you want - rice, mash, jacket potato,...

    ETA: I also cook chicken with quinoa. Basically the same sort of recipe as a risotto (without the butter and cheese). You can add anything to it. Quinoa is a great low calorie alternative to rice. You can also do the same with barley.
