Crock Pot Smoked Sausage & Cheddar Soup (199 calories)
I’m Wade. And I’m obsessed with soup. There…I said it.
This delicious sausage & cheddar soup, adapted from a Peace, Love & Low Carb cookbook, has a nice smoky edge and plenty of sass. Okay…I’m just kidding about the sass part. I just felt like throwing it in. Sounded good, eh?!
The soup also has red pepper flakes, which also happens to be my girlfriend right now. Ha (don’t tell my wife)!

Crock Pot Smoked Sausage & Cheddar Soup
Ingredients:
14 oz. smoked beef sausage, halved and sliced
44 oz. beef stock
1 cup chopped carrot
1 cup chopped celery
1 small diced onion
4 minced garlic cloves
1 tsp. red pepper flakes
1 tsp. salt (more to taste)
½ tsp. black pepper
1 cup half-and-half
8 oz. light cream cheese
2 cups shredded sharp cheddar
Directions:
Heat crock pot on high. Add sausage, beef stock, carrot, celery, onion, garlic red pepper flakes, salt and pepper. Cook on high 4 hours. Add half-and-half, light cream cheese and shredded cheddar. Whisk until there are no longer any clumps of cream cheese. Cook additional 2 hours.

Totally saving this recipe- you know your soups my man… I had some sausage with sauerkraut and homemade mashed garlic mashed potatoes with good seasoning of pepper and salt organic butter YUMMMMMMeee all mixed in together with equal parts of each and it was pure heaven0

Just added this to my recipes. BTW... I changed the cream cheese and cheddar to the full fat kind and also changed it to 8 servings (I'll eat this for dinner) and it only turned out to be like 530 calories. That's WITH wonton strips as a topper, too.0

For my LC/HF diet ill switch out half and half for whole cream and light cream cheese for regular cream cheese but other than that looks amazing!
