I’m Wade. And I’m obsessed with soup. There…I said it.

This delicious sausage & cheddar soup, adapted from a Peace, Love & Low Carb cookbook, has a nice smoky edge and plenty of sass. Okay…I’m just kidding about the sass part. I just felt like throwing it in. Sounded good, eh?!

The soup also has red pepper flakes, which also happens to be my girlfriend right now. Ha (don’t tell my wife)!

Crock Pot Smoked Sausage & Cheddar Soup

Ingredients:
14 oz. smoked beef sausage, halved and sliced
44 oz. beef stock
1 cup chopped carrot
1 cup chopped celery
1 small diced onion
4 minced garlic cloves
1 tsp. red pepper flakes
1 tsp. salt (more to taste)
½ tsp. black pepper
1 cup half-and-half
8 oz. light cream cheese
2 cups shredded sharp cheddar

Directions:
Heat crock pot on high. Add sausage, beef stock, carrot, celery, onion, garlic red pepper flakes, salt and pepper. Cook on high 4 hours. Add half-and-half, light cream cheese and shredded cheddar. Whisk until there are no longer any clumps of cream cheese. Cook additional 2 hours.
