need a good low cal recipe for butternut squash soup
Someone gave me a can of this one time and I cannot find it in the stores. So I bought a couple of the squashes(is that the correct plural??) earlier but I can't find a recipe that I really like. I just want a simple soup, I suppose I could play with my own recipe but I wanted to see if anyone else had any ideas first. Thanks!!

It's a little exotic, but my sister loves it! I think it gives it more flavor and makes it a little less bland. I think it's delicious. I got the original recipe out of the Cooking Light magazine I used to subscribe to.0 -

My go-to is butternut squash and sweet potato soup:
- peel and cube butternut squash and sweet potato (amounts should be roughly equal)
- cook in vegetable or chicken stock until soft (if you've got homemade stock, great, otherwise a stock cube will do just fine)
- puree and add some garam masala to taste (don't skip this, the garam masala makes all the difference!)
Add a dash of double cream if you like.
You can also add a tin of chick peas or black beans.0 -
I literally cube it roughly, roast it with some onion, chillis and garlic, add a little chicken stock and blitz. Add a little more stock until it's the consistency you like (I like it quite thick!). Chillis can be omitted if you don't like them, works fine. The beauty of this is, it doesn't matter if you don't have the correct weight of squash... you just add everything to your taste. Very low calorie too.
