The Annoying Calorie Equation

If I am counting "calories burned", and i'm dieting and exercising, should I only count the calories literally burned from working out, or both those and the deficit from the maintence via my diet. (meaning 2000 maintain and 1400 diet = 600 deficit)

I don't want to over expect and be disappointed. I think online I've read to consider both, but I'm wondering if (since your body adjusts to cals so easy) I should only consider the literal "burned" ones.

What do you think is best?
