I have a huge craving for pancakes this morning but seems that they have a fair bit of calories... flour, eggs, oil..

Does anybody have any good recipes for healthy/low cal pancakes?

I was looking into recipe for quinoa pancakes, but im looking for any ideas..thanks!

Bisquick Heart Healthy mix is very good. I actually used it this morning to make banana pancakes and they were delish!

I just put in a recipe for pancakes . . . for a large quantity of pancakes, but you can split the recipe in half. It uses half the oil (substitute with applesauce) and half the milk called for (substitute half water) . . . as well as omitting sugar. If you can't find it, let me know . . . I'll give you the recipe . . . :0)
  • I haven't been eating pancakes in a while and I am no expert but Aunt Jamima says that two 4in cakes is 160 calories and 15 from fat, high in carbs 32 g and sodium470 mg, but use cooking spray instead of oil and all you add is water. It is the syrup that is Bad. Maybe it would be better with diabetic syrup. Don't think I could talk myself into that, would rather add softened blueberries and splenda on top.

    Tworecipes I like:

Whole Wheat Blueberry Pancakes (I use real sugar in these, it doesn't affect the calorie count much. Also good with strawberries)
    http://allrecipes.com/Recipe/Whole-Wheat-Blueberry-Pancakes/Detail.aspx

    Pumpkin Pancakes
    http://allrecipes.com/Recipe/Pumpkin-Pancakes/Detail.aspx

    And a pancake mix recipe:
    3 cups whole wheat flour
    3 cups all purpose flour
    2 TBSP baking powder
    1 TBSP baking soda
    .5 tsp salt
2/3 c sugar (this is for the WHOLE recipe, it doesn't come out to much per pancake).

To make pancakes, add the following to a cup of pancake mix:
    1 egg
    3/4 cup skim milk

I put the mix in the nutrition calculator (guessed it makes 6.5 cups, it probably is a bit more) and it came up to 478 calories per cup of mix, plus egg and milk would equal about 610 calories per cup of mix. Each cup prepared makes about 6 pancakes so that is about 100 calories/pancake. I like to drop in some blueberries or chocolate chips for a treat

Also, I don't put butter or syrup on pancakes -- too many extra calories! I eat plain (that is why I like to add in fruit or a tiny bit of chocolate) or sometimes top with a dap of whipped cream or some bananas.

Quaker now has Quaker Oatmeal Pancake mix that you can find in the oatmeal isle of your grocery store. I make it the traditional way (with eggs and 2% milk) and if you use a 1/4 cup to measure out the batter you get 6 pancakes. Serving size is 2 for 213 calories and 9 grams of protein. Use with 2 tbsp of real maple syrup and 1 tbsp butter/margarine that you have and it still comes out to less than 400 cals. Eat with turkey bacon and yum! Since I've found this I won't use any other kind - it's filling, tastes good, and easy to make (I purposefully make double batches and bag the leftovers in 2's that way I can heat them up for a quick breakfast for work - 45 sec in the microwave). Hope this helps!

I have a Paleo recipe: Almond Flour Pancakes... I wouldn't say low cal, but definitely a healthy alternative! PM me if you are interested.
  • I would say go for pancakes that use all whole wheat flour. You are definitely going to have to use some type of flour, but at least stay away from refined or bleached white flour. Then if you look up a recipe with pancakes, you know what you're putting into it instead of using a mix. Look in the organic section at the grocery store, and it'll have pancake mixes with whole wheat, no gluten, etc. Also, you can also choose to put egg whites in instead of the whole egg too. That would decrease the amount of fat..And actually, as far as the syrup goes, my boyfriend bought this Atkins syrup, and it wasn't that bad!

Pancakes are my nemesis... So hard to make healthy AND delicious! My "middle ground" are protein pancakes, which are surprisingly delicious and way easier to make!

    1/3 cup old fashion oatmeal
1/3 cup egg white substitute (or approx 3 egg whites)
    1/3 cup 1% cottage cheese
1/2 tsp each cinnamon and vanilla extract

Toss it all into a small food processor and blend into a batter. Makes 2 pancakes. Cook in a hot pan and top with whatever you like!! Sometimes, if I've got extra cals or I'm feeling a little saucy, I add in walnuts and top with some fresh fruit that I cook down into a "sauce"... You can fold fruit into the batter but it tends not to hold together very well and flipping can be an issue.

    ½ cup quick oats (40g)
    1 cup skim milk (8oz)
    2 tsp lemon juice
    ¾ whole wheat flour (90g)
    1 tsp cinnamon
    ½ tsp nutmeg
    ½ tsp baking soda
    ½ tsp baking powder
    1 egg
    1 tsp vanilla
    1 tbsp unsweetened applesauce
    1 tbsp honey
In a medium bowl, combine oatmeal, milk and lemon juice. Let the mixture sit while preparing the dry ingredients (at least 2 minutes).

In another bowl, combine all the dry ingredients, whole wheat flour, cinnamon, nutmeg, baking powder and baking soda. Set aside.

Beat or whisk the egg, vanilla, applesauce and honey into the milk/oatmeal mixture. It will be very liquidly.

Add the dry ingredients to the wet and mix with a spoon until just combined.

Pour batter in a non-stick skillet or griddle over medium heat sprayed with non-stick cooking spray. Cook about 1-2 minutes a side, small bubbles will form but not as many as traditional pancakes. I just peaked underneath for a light brown color, then flipped.

That seems pretty high in the calorie and fat department . . . Just sayin'. :0) Most pancakes are about a 1/3 cup of batter and that would still be slightly over 200 cal per pancake . . . if you're saying its 610 cal per cup of batter. I'm actually finding the recipe pretty confusing . . .mine calls for 2 cups flour to 4 Tbls baking powder and only 4 Tbls sugar . . . etc. Whole wheat would just mean replacing some or all of the all purpose flour with whole wheat flour.

100 calories per pancake is high in calories?

It makes a large amount of dry mix. Take 1 cup of dry mix and add in one egg and 3/4 cup skim milk. That batter will make about 6 pancakes (I used about 1/4 cup batter per pancake, I think, though it might have been 1/3).

As for sugar, it comes out to about 2 tsp per pancake.

They are so good! I make a batch (makes 8 pancakes, 1/4c each) and I freeze them. During the week I pop one in the toaster on the "defrost" setting. So quick and easy

I agree with meag, but I sub the cottage cheese with bananna..about 6oz. top with honey or agave nectar.

I made pancakes this morning with 1 cup of Bisquick heart healthy mix, 2 small mashed bananas, 2/3 cup 1% milk, 1/3 cup water, 1/4 cup egg-beaters & 1/3 cup quick oats.

They made 9 huge pancakes that fed 3 people and we were all full - each pancake had only 88 calories and 1 g fat.

I had these this morning! They are delicious.

    From here: http://1greengeneration.elementsintime.com/?p=377

1/2 c. all-purpose flour (slightly more if you like thicker pancakes)
    1 1/2 T sugar
    1 t salt
    1/2 t baking soda
    1/2 t baking powder
    2 large eggs
1 c yogurt (vanilla or plain)
1 t vanilla (leave out if using vanilla yogurt)
1 c fresh or frozen fruit (optional)

Mix dry ingredients together, then mix in the wet. I doubled the recipe for my family and subbed half the eggs with egg whites.
