Low Carb Brocolli Cheddar Soup

1 1/2 cups raw heavy cream (1 1/2 pints if you used packaged heavy cream)
3/4 pound raw cheddar cheese, freshly grated or shredded (or 1 1/2 bags of shredded cheddar cheese) - May add more or less for taste
3 cups chicken stock (can used packaged stock or broth)
1 bag of Frozen brocolli cuts (16 oz bag)
Sea Salt and fresh cracked black pepper to taste

Place the chicken stock and the bag of frozen brocolli to a boil and then reduce to medium until brocolli is cooked to your liking (I only cook a few minutes because I like it still firm)

Add the heavy cream, while stirring
Slowly start adding the cheese (use more or less, depending on your taste and how thick you like your soup)
Add sea salt and fresh cracked black pepper to taste

Simmer for about 15 minutes and serve.

    Sounds delicious.....but probably WAY too high in calories and sodium for my taste! :frown:

    I don't count calories, so carb and fat counts are all that matter to me. Hence the reason it is a low carb recipe.

    I need my fat % to be at least 65% of my daily values, so this is perfect for me and I am cutting some of the meat so getting protein in other ways is important.
