Chicken Salad

Does anyone have a good recipe for making chicken salad? I have some roasted chicken left over from dinner and don't want to waste it.

  • I dont have the calories but in general I use the following. Chopped onions and celery, apples or cranberries(one or the other), light mayo, and salt and pepper, and curry to taste.

    Lots of celery and a little bit of mayo. You'd be surprised how little mayo you need (add it last so you already have the moistness of the celery). Add salt and pepper to taste!

    And I swear my mama adds some mustard ... but you might want to try that on the side.

    You could use plain greek yogurt instead of mayonnaise - it would up the protein and is a healthier fat than mayonnaise!

    I love to make ck salad w left over roasted ck. I add jalapeños , celery or celery seed a little garlic salt , grapes, or cranberries, apples and nuts, I moisten with a little mayo and a little sour cream and a little apple juice would work too. LOVE IT! I don't have the calorie breakdown, but of course low fat products as wells as serving size will make a lot of difference. This is great on a half of an avocado or in a mini bun or mini pocket...hope you like!

    I haven't tried the yogurt, but sounds like a great idea. Gonna do it!

    All these sound good, especially adding the jalapenos! Mmmmm nummy.
    Just remember if you don't have the calories/nutritional content just make it a recipe! :)

    I like to put it in the food processor with celery, a carrot or two, a little mayo, black pepper, and a healthy squirt of spicy brown mustard. Some cayenne if you like spicy, or leave it out if you don't. It doesn't look pretty, but it tastes sooooooo good. :)
