Excited for superbowl! Am looking for a few healthier snacks. Would love to get some healthy wing recipes. Here's one snack idea to start the thread. This is from Gina at skinnytaste.com. Highly recommend her website!

Skinny Taco Dip
Servings: 24 • Serving Size: 1/24th of dip • Old Points: 1.5 pts • Points+: 2 pts
Calories: 59.2 • Fat: 3.6 g • Protein: 2.2 g • Carb: 4.7 g • Fiber: 0.6 g

8 oz 1/3 less fat Philadelphia cream cheese
8 oz reduced fat sour cream
16 oz jar mild salsa
1 packet taco seasoning
2 cups iceberg lettuce, shredded
2 large tomatoes, diced
1 cup reduced fat shredded cheddar cheese
2.25 oz black olives,
In a large bowl combine cream cheese, sour cream, salsa and taco seasoning and mix well with an electric mixer. Spread on the bottom of a large shallow glass dish. Top with shredded lettuce, tomatoes, shredded cheese and black olives. Serve with baked tortilla chips.

    My husband and I like to grill our wings rather than frying them. We make our sauce with Franks red hot sauce, brown sugar, little butter, lemon juice, garlic or garlic powder and then just simmer. If the kids are eating them too we add a little no salt added or no high fructose corn syrup ketchup...makes them more like spicy BBQ wings. Thay're deelish!!

    You could also broil them. Or make boneless by cutting chicken tenders or breast and grilling them too!

    Ingredients:
    2-3 pounds of boneless, skinless chicken breasts
    1/2 cup - 3/4 cup 99% fat-free chicken broth
    1/2 cup - 3/4 cup Franks' Red Hot Sauce (amount used depends on amount of chicken and how saucy you like it.)
    Celery sticks and bleu cheese dressing for dipping; served on the side
    Preparation:
    Slice the breasts into 1" wide strips.

    Spray a non-stick frying pan with cooking spray and brown the chicken until it's cooked through.

    Mix together chicken broth and Franks' Red Hot Sauce and add them to the chicken.

    Lower the heat, cover the pan, and simmer the chicken for 15 minutes, stirring occasionally, until the sauce has thickened and is coating the chicken in a beautiful, glossy layer of spicy goodness.

    You can adjust the hotness of the chicken by adding more or less hot sauce in proportion to the chicken broth. For folks who like their wings on the mild side, 1/4 cup of hot sauce to 3/4 of broth might help keep the "heat" down. If you like your wings to be incendiary, or nuclear, as we like to say, then increase the hot sauce and decrease the broth.

    Serve them with the prerequisite celery sticks and (low-fat) blue cheese dressing on the side. It's as close to an authentic Buffalo Wing experience as possible, without destroying your diet.

    I like my bonless skinless chicken breast (appx. 4oz so 110 cal's) cut up into either bites, strips or you can eat the whole breast with either French's Buffalo Sauce 5cal's per tbsp or Lawry’s has new liquid marinades, Signature Steak House and Buffalo BBQ are good and add loads of flavor in just 30 minutes. I look for sauces and marinades that don’t have sugar, corn syrup or other sweeteners as the main ingredient, and these don’t.
    They have 10 calories in one tablespoon, and are really yummy. The Buffalo one taste like Buffalo wing sauce, but also would be good on pork, ribs or turkey breast.

    So what I do is cut up the breast into 8-10 bite size pieces, which would make them roughly 10-15cal's each and depending on which sauce you use you add 5-10 more cal's per bite...not bad for cal's and delicious! So I marinate them for 30min to an hour and then bake in the oven at 350 for about 45min then pop them into the broiler for the last 3min or so (keeping a very close eye on them) to get em a little crispy. The good thing is about doing it this way, is their not fried but still taste delicious, most people won't even be able to tell, and you can use Lawry's and make a whole platter with different flavors!! Also good as a whole breast for dinner with a salad and a tbsp of fat free sour cream or yogart dressing. Good luck :)

    This is our FAVORITE healthy wing recipe. We make it a lot and its always delicious. The high heat, and panko breadcrumbs make it feel like they're deep fried but without all the grease.

    1 C whole wheat flour
    2 1/2 C panko breadcrumbs (whole wheat if possible)
    4 large egg whites
    12 oz chicken tenders
    non stick cooking spray
    1/2 C Franks Redhot Buffalo wing sauce
    1/3 C Fat Free Blue Cheese dressing

    Preheat oven to 450. Place a wire rack on a foil lined baking sheet and set aside.
    Put the flour in a shallow dish, the panko in a separate shallow dish and the egg whites in a medium bowl. Whip the egg whites until extremely foamy but not holding peaks.
    Dredge chicken in flour, add to the egg whites coating completely, and then dredge in the panko.
    Spread the chicken on to the wire rack. Spray lightly with cooking spray. Bake until the tenders are cooked through, approx 20 minutes.
    Using a pastry brush, brush the tenders with the buffalo sauce. Serve with blue cheese dressing and celery sticks.

    Thank you so much for all your yummy sounding recipes.....we have a SuperBowl party every year and I've come to find out of course all the females are watching what their eating so I think I can get away with making any of these. Thanks again for sharing :smile:

    If you like to dip your wings in Ranch, then you have to try this: buy Hidden Valley Ranch origional dry mix. Instead of mixing it with sour cream-mix it with plain greek yogurt. Tastes great !! My kids will even dip vegetables in it.
  • I posted these under a different topic a while back, but they are some of my favorites:

    Nutritional info will be based on the specific products you use. Of course these are good in moderation, but it's nice when those of us who are counting calories feel like we get to join in the football fun!

    Turkey Sliders (adapted from a pampered chef recipe)

    Mix together:
    .5 lb 99% lean ground turkey (it was probably more like .6 because I used 1/2 the package)
    1 clove garlic minced
    1/2 small onion diced fine
    1/4 cup frozen spinach, defrosted and drained
    Salt and pepper or other seasoning

    Press into a rectangular shape on a pan to about 1/4 inch thick (I use the pampered chef stoneware bar pan... you should probably use a pan covered in aluminum foil if you don't have stoneware). Bake about 15 minutes at 450 degrees or until turkey is cooked through.

    In the mean time:
    Cut about 1/4-1/2 inch off the ends of 4 hotdog buns and cut each into three sections (perfect sized slider buns! and usually you can find whole wheat buns)
    Cut 3 slices of cheese into 4 pieces

    When the burger is done cut into 12 equal pieces. Top each burger with cheese and 1 pickle slice and place on bun. These are great! The spinach is a great way to sneak in veggies and keeps the turkey really juicy.


    BBQ Chicken Pizza (probably taken from somewhere that I can remember... maybe HG since it uses laughing cow)

    Spread 1 wedge laughing cow cheese onto a burrito-sized flour tortilla. Top with 1/4 cup of your favorite bbq sauce. Top that with about 1 cup cooked chicken, shredded or diced. Then add 1/2 cup part skim mozzarella. Bake at 450 degrees for about 15 minutes, until the cheese is melted and tortilla is crispy.

    I used to be against using a tortilla as a pizza crust, but this recipe changed my mind.

    Ingredients
    1 (8-ounce) tub light cream cheese
    2 tablespoons chopped fresh dill
    1 tablespoon fresh lemon juice
    4 ounces smoked salmon, chopped, divided
    Dill sprigs (optional)
    Preparation
    1. Combine first 3 ingredients in a food processor. Add half of salmon; process until smooth. Fold in remaining half of salmon. Garnish with dill sprigs, if desired.

    1 cup coarsely chopped onion
    1 cup cilantro sprigs
    1 jalapeño pepper, coarsely chopped
    1 garlic clove, coarsely chopped
    1 (14.5-ounce) can diced tomatoes, undrained
    3 tablespoons fresh lime juice
    1/4 teaspoon salt
    1 (14.5-ounce) can diced tomatoes, drained
    Preparation
    Place first 5 ingredients in a food processor, and process until minced. Combine onion mixture, lime juice, salt, and drained tomatoes in a medium bowl; stir until well blended.

    I use Sam's Tone's garlic and herb seasoning plus McCormick Montreal Chicken Seasoning (both from sam's). I use half and half and just mixed the wings with it.

    Taste great with or without the bbq.

    10 lb. bag does not last at my house.

    Great recipes!! As for healthy wings, I just add hot sauce or buffalo wing sauce to boneless chicken breast for a lower fat *recipe*. I made a salad (loaded w/ veggies) and top w/ the chicken, then sprinkle w/ real blue crumbled cheese and salsa. :bigsmile: Much healthier than the blue cheese dip too!
