Heey folks... whats your favourite HEALTHY SIMPLE chicken recipe??

take a piece of skinless boneless chicken breast and use a can of soup to pound it thin---put the chicken between two pieces of saran wrap and then pound the top piece of saran wrap -great for frustraton.
Then grab a piece low fat honey ham (lunchmeat style) and one wedge of laughing cow cheese and spread it out on the chicken, then roll it up and secure with a toothpick. Season and bake for about 30 mins. This my family's newest favorite.0 -
I love lemon pepper chicken. Just chicken breast with lemon pepper seasoning or lemon juice and pepper. simple and good0

A chicken breast cooked in the George Foreman Grill and then cut it up, put it on a whole wheat spouted grain tortilla with some some black beans warmed and smashed, and some low fat cheese and chili powdew (I don't use any other spices) and all rolled up in the tortilla and then microwaved about a minute to warm the tortilla and melt the cheese. I usually cook several chicken breasts and put them in the refrigerator to use though out the week.0

my version of chicken parmesan: chicken breast cut in half, dipped in egg white and coated in italian-seasoned bread crumbs, and instead of fried, baked. serve with a bit of pasta sauce, some low-fat mozzarella cheese, and some whole-wheat pasta. mmmm.0

Throw chicken breasts in the crockpot with a jar of salsa...great for chicken tacos, chicken taco salad, quesdillas, etc...0

Just posted this on another thread... Cooking Light Magazine's Chicken Larb. I know 'larb' isn't the most appetizing name, but it is AMAZING. I am really not a big fan of chicken, but I love this meal. It's basically chicken lettuce wraps. :happy:

My favorite is lemon garlic chicken.
Take the breasts and lay on a baking dish. Cover with salt, pepper (lots), fresh lemon juice and tons of fresh minced garlic. Cook for 30-35 minutes uncovered. YUM!0 -
Sweet and Spicy Chicken
1lb chicken breast cut into cubes
1 packet taco seasoning
2 cups salsa
1 cup orange marmelade or peach preserves
Brown rice
Cut up chicken breast into small chuncks and place in large zip lock bag. Add taco seasoning and shake bag to coat chicken. Brown chicken in a skillet with a tbs. or two of oil. Meanwhile in sauce pan combine salsa and marmelade. Heat till well combined. Once chicken is cooked, pour sauce into skillet and bring all to boil, then reduce heat and simmer for 15 min. Serve sweet and spicy chicken over brown rice. Makes 4 -6 servings.0 -
On the Charcoal Grill...
Cook chicken leg quarters that have been seasoned with salt, pepper, garlic powder on a charcoal grill for an hour, start on bone side, then flip every 20 minutes. This is so inexpensive (less than $3 for 4 leg quarters!!!) and by far our favorite tasting, melt-in-your-mouth chicken! Serve with beans and corn tortillas. Optional: grill a large onion split in 2 at the same time to eat with the meal.0 -
I adore this recipe: you can alter the vegetables according to preference, you can forgo the rice if you wish or just use very small amounts. I always eat this kind of Korean style with chicken mixture on lettuce leaf and dollop of sriracha sauce. Very delicious. (traditional style Korean uses a different kind of sauce etc but its my little approximation).
