Cheap and easy dinner recipes
Hello 
I am looking for quick, easy meals for dinner. I am a single mom of two teenage daughters and sometimes we get sucked into the eating out thing due to just not having enough time. I love to cook and would love any suggestions you all might have. I do know that anything can be made healthy if it is prepared right just need ideas

Once a week I take chicken breasts and throw it in the crock pot with either taco seasoning or sesame ginger dressing...it'll shred over the course of the day and then I have it to put on salads, or tortillas...we use our crockpot or grill just about every day, it's easy and healthy...0

Yea, if you don't plan ahead, you will be eating out. If you want to succeeed and stay away from that, then you have to prepare ahead of time. It may mean spending your free nights preparing meals for the week.
Most of everything I cook takes less than 30 mins, as I am a busy mom running teenagers around as well. I buy ground turkey from Super Walmart that is under 5 bucks a pack. I make pizza burgers, taco salad, chili with it.0 -

I love Rachel Rays Soups and Stoups. My favorite low cal ones are the Salsa Stoup (with double decker Quesodillas) and the Black Bean Stoup (with South West Monty Cristos)
I also love Spighetti Squash with my hubby's homemade veggie sauce. Or any other sauce you like. Chicken fajita salad, Taco Salad. My hubby also makes awesome Asian turkey burgers with roasted sweet potatos.

Not sure if you have ever been on sparkpeople.com but they are a free site like this one.......... they have a recipe tab..........lots and lots of recipes.........that have been rated by their users. I love both of these sites they are so AWESOME and a great source of FREE help.0

A super quick, easy and inexpensive way to feed 3 people a relatively healthy meal is to buy "Viola" meals in the freezer section, then cross the aisle and find frozen veggie bags that coordinate with the Violas. Mix one meal bag with one veggie bag and cook per the Viola directions. Instant healthy supper!0

I LOVE to cook but hate spending a lot of money and I get stuck making the same ol same ol all of the time too. My husband got me a subscription to Cooking Light for xmas and I love it! I try and make one new recipe a week and pick out things that are easy and inexpensive.
This weekend I bought a nice cod fillet ($6.50) and dredged it in egg white and then panko w/ paprika, garlic powder, onion powder, salt & pepper and then broiled it. The outside of the fish was crunchy like fried fish and the inside was moist and flaky AND it was low cal. I mixed up some light mayo with dill relish, dill, and lemon juice for tarter sauce and served w/ brown rice and steamed green beans. It was a hit and took 15-20 minutes from start to finish.0 -
Thanks for all of the suggestions! Yea, it is so easy to just stop at McDonalds on the way home after a super busy day but sooo unhealthy! Also, since I am a single mom, money is always tight and sometimes even cooking at home can be pricey so all of these are very helpful!0
