HAWAIIAN OATMEAL:

Need:
1/2 cup old fashioned oats
About 2/3 cup of water
1/2 banana, sliced
1/4 cup pineapple chunks (I used canned, but fresh would be better!)
2T sweetened coconut flakes
2T sliced raw almonds

Make: Place oats in a microwave safe bowl with water and 1 tblsp of the coconut. (you can pour in a little extra pineapple juice here too.) Cook mixture for 1 minute. Next add banana slices and pineapple chunks. Top with remaining tblsp of coconut and sliced almonds.

About 350 calories.

LUNCH SALAD:

Need:
1.5 cups spring mix salad greens
1/2 oz. crumbled bleu cheese
2T dried cranberries
2T chopped walnuts
2T fat free balsamic vinaigarette
2T chopped red onion
1/4 c chopped raw broccoli
1/4 cup chopped cucumber

Make: toss all ingredients in a salad bowl. Serve with pita bread wedges.

About 350 calories
