You can never go wrong with Broccoli cheese and rice casserole. Or you can always add chicken to make it a broc,cheese,rice and chicken casserole, to make it more full filling0

I love to broil a flank steak under the broiler, brushed very lightly with olive oi, salt and pepperl. It ttakes about 5 min per side if about 1" thick. Then top it with some sliced green peppers, a can of chopped tomatos, and a half cup of sliced mushrooms. Pour this over the steak and sprkinle with some parmesean cheese ( I prefer shaved, but the regular "sprinkle from a can" kind works too. Slide it back under the broiler for another 4 minutes or so. SO delicous and it looks super fancy. VERY VERY healthy and lo cal. I got this from the Biggest Loser Family cookbook.
Also, if flank steak is too pricey It works with practically any cut of meat and is still good!0
