Healthy Super Bowl Recipes anyone?
We were going to a Super Bowl party this weekend and were asked to bring an appetizer or dessert. I really want to bring something good but "healthy". I was thinking of a veggie tray but that is not very exciting. I don't want to lose focus and motivation. Any ideas??

we LOVE hot wings so we are going to make them a little different but MUCH healthier!
cut up boneless, skinless chicken breasts into bite size pieces and then toss it with hot sauce and hot spices and bake. Then i broil for a few minutes to get them a little crispy on the outside. They make a good appitizer and you can dip them in fat free ranch or blue cheese0 -

you could do a 7 layer dip that is low fat and then use pringles sticks for the dipping!!! Use the refried beans (no fat), low fat cheddar cheese, leave out the avacado, use non fat sour cream and sprinkle with black olives - and also use salsa (no fat)0

I do this with Chicken breast tenderloins! Also, there are a TON of healthy dip recipes out there.0 -

ooohhhh, you could bring a black bean & corn salad/dip and blue tortilla chips. The salad can be enjoyed with chips or by itself. I love to have it with avocado. uuummmm...so good! Here's a recipe I use:
Salad Ingredients:
5 ears sweet corn, grilled (I use 1 bag of Fire-Roasted corn)
2 green peppers, chopped
1 red pepper, chopped
1 yellow pepper, chopped
2 jalapeno peppers, chopped
1 bunch green onions, sliced
½ cup fresh cilantro, chopped (I used 1 cup)
2 15oz canned black beans, drained and rinsed
Vinaigrette Ingredients:
¾ cup olive oil, plus 2 Tbsp for brushing corn (didn’t need the 2 tbsp since I didn’t grill corn)
¼ cup apple cider vinegar
1 Tbsp honey
1 lime, zested and juiced
2 cloves garlic (I used 3 cloves)
½ tsp cumin
Salt and pepper, to taste
Directions:
Combine all vegetables and corn with cilantro. Add beans and toss gently.
In separate bowl, whisk vinegar, olive oil, honey, lime juice and ½ tsp lime zest, and spices.
Pour over vegetables and coat evenly. (I keep it in a separate jar and add vinaigrette as needed)
Serves 14-160 -
Garden of Eatin' makes some really good baked chips (blue corn or omega-3 enriched yellow) and salsa is healthy.0

Ok, here is what I like
3-4 boneless skinless chicken breast cooked and diced into little pieces
2 packages of fat free cream cheese softened
2 cups of fat free of light mayo
2 cups of fat free of 2% shreddard cheddar cheese.
diced jelapenos to taste..(I do 1 1/2 table spoons)
Mix all together in corningware dish and bake at 350 until it bubbles on the sides.
Serve hot with Whole Grain chips.

I was going to suggest a 7 layer dip as well:
Easy guacamole (avocado with a bit of lemon juice and garlic)
Lowfat sour cream
Lowfat cheese
Refried beans (I just do regular.. the lowfat isn't that much better for you and I don't like the taste)
Chopped Roma tomatoes
Chopped Black Olives
Sliced Green onions
Serve with veggies or homemade baked tortilla chips.0 -
Coconut Tenders with Pineapple Dipping Sauce
½ cup cornstarch
1 tsp paprika
½ tsp sea salt
½ tsp black pepper
2 eggs
1 tsp mustard
2 cups shredded unsweetened coconut
1 lb chicken tenders, or 2 containers extra firm tofu
¼ cup coconut oil
Lightly beat eggs and mustard in a bowl and set aside. In another bowl, combine cornstarch, paprika, salt and pepper and set aside. Place coconut in a third bowl and set aside. If using tofu, cut into thick slices (you should get about 4-5 slices per block of tofu). Dredge chicken or tofu in cornstarch mixture, dip into egg mixture, then coconut. Place 2 Tbsp coconut oil in frying pan and heat over medium high heat. When hot, add chicken or tofu and brown on each side until cooked. Repeat steps until all chicken and tofu is cooked. Serve with dipping sauce.
Sauce:
1 Tbsp white balsamic vinegar
1 cup pineapple preserves (low sugar)
1 pinch red pepper flakes
Whisk all ingredients in a small bowl.0 -
I know I have posted this a couple of times before... sounds different, but it is OH SO GOOD! Great to dip pita crisps or veggies in. It's fantastic!
Eggplant & Pepper App
3 long, hot banana peepers, or 1-2 jalepenos
2 large eggplants
½ c evoo
1 large onion, chopped
6 cloves garlic, chopped
1 TB lemon juice
1 TB red wine vinegar
Sea salt/pepper to taste
Roast peppers and eggplant until skins blister. Cool and peel, discard seeds.
Puree peppers and eggplant.
Saute onion in several TBs evoo until soft, add garlic and cook 1-2 min. Mix into puree. (I pureed it too) Add remaining evoo, juice, and vinegar, plus salt & pepper.0 -
Buffalo Chicken dip for the Crockpot.
2 chicken breasts boiled and shredded
2 cups low fat cheddar or mexican blend
1 package of fat free cream cheese
1 cup of hot sauce. Use more or less dependind on your love of hot stuff
2 cups fat free ranch or low fat blue cheese.
Mix all together put in crockpot till it all melts together.
Serve over Baked Scoops or whatever low fat cracker or chip you want.0 -
