Light Chocolate Chunk Cookies

Got this recipe from Health Magazine. I haven't tried it but it looks sooooo good! If anyone has any healthier modifications, please feel free to share!

Ingredients

* 5 tablespoons unsalted butter, softened
* 1/2 cup firmly packed light brown sugar
* 1/4 cup granulated sugar
* 1 tablespoon canola oil
* 2 large eggs, lightly beaten
* 1 tablespoon vanilla extract
* 3/4 cup all-purpose flour
* 1/2 cup whole-wheat flour
* 1/2 teaspoon baking powder
* 1/4 teaspoon salt
* 6 ounces good-quality dark-chocolate chunks (60-70% cocoa solids), such as Scharffen Berger
* 3/4 cup dried cherries
* 1 cup sliced almonds

Preparation

1. Preheat oven to 375°.

2. In a large bowl, combine butter and sugars; beat with an electric mixer until fluffy. Add oil and eggs; beat until creamy. Stir in vanilla.

3. In a medium bowl, combine flours, baking powder, and salt. Add flour mixture to butter mixture; stir well. Gently fold in chocolate, cherries, and almonds.

4. Scoop batter by heaping tablespoons onto 2 baking sheets covered with parchment paper. Bake cookies in 2 batches in upper and lower third of oven until golden on top and bottom (12-15 minutes). Transfer cookies on parchment paper to a wire rack; cool (cookies will crisp as they cool). Store cookies at room temperature in an airtight container (they will keep for up to 4 days).

Make each cookie super-satisfying by adding dried fruit and chopped or sliced nuts. Dark chocolate is rich in heart-healthy antioxidants, and using whole-wheat flour adds fiber and more nutrients!

    That's my problem too. I was thinking of making them and freezing all but like three at a time.

  • Awesome recipe! I'm a baker (just at home but I'm damned good at it) so reducing my calories has me at a complete *stop* for baking :(.

    As for not being able to just eat one (I suffer from that issue myself) you could make this dough. Measure the dough out in whatever portions you want to bake, place on wax paper, put in freezer until completely frozen and then throw them in a ziploc and store in a freezer.
    You do this so you can eat only as many ..such as one or two..at a time and you have to THINK before you eat it, so you turn on your oven, set up your cookie sheet and tell yourself ONE OR TWO and there you go, the rest are in your freezer for the next time!

    These sound good. You might want to substituee Splenda Brown Sugar Blend for the brown sugar for even less sugar. And cherries are LOADED with sugar but I don't think the recipe would be as good without them.
  • You could shave a little fat and some calories off with a couple of substitutions-- such as Splenda for the granulated sugar, and the Splenda brown sugar blend for the brown sugar (like someone else said). Also, instead of using butter, you can generally substitute applesauce of fruit puree (the same amount) for fats & oils. And as far as the dried fruit, you might want to check for unsweetened versions, but I think they generally sweeten cherries, so perhaps cranberries? I <3 dried cranberries :)
