Looking for a good veggie soup recipe...

Hi everyone - went to the grocery this weekend and want to make a vegetable soup but looking for anyone who wants to share their tried and true recipes. Thanks!!

    Add at least 32 oz of chicken broth or stock and add whatever veggies you want. If you are cooking it in a crock pot, let it cook for a long time, the harder veggies(carrots) take a while to cook.

    Mine is always a hodgepodge of whatever we have left, But I always add fresh garlic, onion, and some tomato sauce as well as some kind of protein (generally canned chicken). Simple and easy, and my family LOVES it every time.

    This is a vegetable soup that has pasta in it so it's technically minestone. Only 78 calories.
    Slow-Cooker Minestrone Soup
    Ingredients:
    4 c. vegetable broth
    4 c. tomato juice
    1 tbsp. dried basil
    1 tsp. salt
    1/2 tsp. dried oregano leaves
    1/4 tsp. pepper
    2 medium carrots, sliced (1 cup)
    2 medium celery stalks, chopped (1 cup)
    1 medium onion, chopped (1/2 cup)
    1 c. sliced mushrooms (or 1 can sliced, drained)
    2 garlic cloves finely chopped
    1 can (28oz) diced tomatoes (undrained)
    1 1/2 c. uncooked rotini pasta (any pasta is fine)
    Directions:
    1. In 4-5 qt. slow cooker, mix all ingredients except for pasta.

    2. Cover, cook on low heat setting 7-8 hours (or until veggies are tender.

    3. Stir in pasta; Cover; cook on High heat setting for 15-20 minutes or until pasta is tender.

    I got this recipe from Weight Watchers years ago.

    4 cups veg broth
    2 stalks celery
    2 med carrotts
    1 med onion
    1 lg can low or no sodium diced tomatoes
    10 oz fresh spinach
    2 bay leaves - remember to take out before eating.
    oregano
    crushed red pepper flakes to taste
    garlic ( i like to use a lg teaspoon of minced)

    you can make this in a slow cooker (takes about 5 hours) or on the stove top (takes about 1 hour) I like to add Great Northern beans to it to give it some extra fiber. Barley or Lentils would also be good.

    I too would love to hear about a great recipe. A lot of soups at the grocery store are super high in sodium. I love soup, but I am working on reducing my sodium, so I am hoping a good home made soup might help.
