I am looking for some new vegetarian recipes that are not too complicated. I still eat fish but no pork, chicken or red meat.

Here are a three of my favorite low-calorie quasi-vegetarian recipes. All three are super easy, super satisfying, and under or close to 300 calories. There may be some chicken stock in them, (we omnivores, ourselves,) but I bet you could switch that to vegetable stock without loosing any of the satisfying deliciousness.

    Butternut and Acorn Squash Soup

    Garden Vegetable Soup
(For even cheaper and easier, I replace some of the fresh veggies with canned or frozen.)

    Hearty Seafood Stew
(We use the cheaper frozen seafood for this recipe. No need for super expensive cuts of fresh fish when it's just going into a big ol' stew pot!)

    Hope these help!

This receipe is vegetarian, however I swap some of the veggie broth for chicken and even add some chicken into it sometimes. Its a super yummy soup and filling too! Plus there's so much room to be creative and make ur own changes, like if you don't have all the ingredients. =]

This is quick and dirty, but I just made a spinach melt wrap for lunch:

In a small, nonstick skillet, throw in 2 cups fresh spinach, 1/2 cup shredded cheese, and about 3 tsp. of yellow mustard.
Cook until the spinach is wilted and cheese is melted.
Put in a whole wheat tortilla (heat some more, if desired) and there you go.
    It was very tasty!

Sounds good! What is dirty about it??? Do you really taste the mustard? I'm not a huge fan thats why I ask. What type of cheese did you use? And do you think this would work with frozen spinach?

I've been a vegetarian for almost a year, but i still do eggs and some fish. I lost about 15lbs and felt so much better! I was even able to go off my meds for acid reflux. Took a little while to get used to tofu but i love making tofu stir fry! I buy the extra firm and cook it with Green Giant Steamers- Asian Medley. Put a little low sodium soy sauce and ginger in there. Its delicious and so easy to make!
