Warm Weather Recipies

Since it's so extrememly cold outside, I've been needing some warm weather recipies. I had a little bit of chili yesterday, but it was way too spicy for my taste. I was thinking we could share warm-weather foods on here. I've been needing some with all this cold and hot soup, etc. just sounds yummy. I'll try to find the chili recipie and post it later.

I like to throw a bunch of veggies into a pot and cover with water, then boil to make a simple veggie soup

Veggies that work well include:
celery
carrot
potato (though not too much)
corn
peas
seaweed
cabbage
radish (daikon?)
mushrooms
Really you can add anything
