Have you tried replacing part of the flour with flax meal and wheat germ? I tried it with oatmeal raisin cookies and my family loved them still. i then got creative and replaced the butter/margarine with applesauce. They still liked them. Then I got more creative and replaced the sugar with a stevia liquid (artificial sweetner). They were'nt too crazy about them, but funny thing is they ate them all.

Nice job making cookies healthy! Great for the kids! I have a challenge for you. Give the cookies to the kids and experiment with friut recipes! Nice warm pumpkin pudding (with Lite Whipped cream on top). Canned pure pumpkin, Truvia packets, cinnamon and nutmeg to taste. So good for you-fiber, vitamin A and the cinnamon keeps blood sugar in check. Microwave it. It's so easy.
