Gluten Free??

I have Celiac Disease so therefore I can't have anything with Gluten in it. Is there anyone else out there who has this problem? If so, I could use some ideas on food. I do eat the Gluten free Rice Crackers that are very good, but just need some good recipes. Thanks! :)

    As for recipes...really anything with chicken, veggies, potatoes...the more natural foods you stick with, the easier to be GF (and healthier!) Good luck!

    I have given up all flour and gluten from my diet, not for medical reasons but because those tend to be me trigger foods. I recently went to a whole foods store and got some millet, amaranth, and quinoa that are good substitutes. I also like brown rice, w/ a little garlic powder and salt with minced onion and green peppers. I also have been making alot of chicken using gluten free bread crumbs and mustard. Peanut butter on a rice cake with raisins is yummy for a snack. I also made a meatloaf stuffed with mashed potatoes. Tomato sauce with a ton of veggiesand either chicken or shrimp, cheese on top. Tilapia fillets rubbed with garlic, salt, pepper, thyme, sage. Pretty much pick a meat, add veggies, add a grain. I really like amaranth. Looks funny, feels kinda gluey, tastes awesome! Experiment with the different grains to find a texture and taste you enjoy. Good luck.

    I don't have Celiac Disease, however, I have been interested in goin gluten free. I hear that it actually helps elimante the bloat and shrink your waistline. Now, I could be wrong bc I've never tried it so Idk it's affects but I am interested in tryin it. I do know one thing: If I eat alot of carbs I become extremely bloated so therefore, gluten free would be a much better option for me.

    Yes, it DOES eliminate the bloating for sure! Thats one thing that happens to me when I eat the slightest bit of gluten...my stomach gets really big and I gain.
