Dill-Cucumber Tzatziki

Ingredients

•1 cucumber, peeled, diced
•8 ounces Greek yogurt
•Half lemon, juiced
•2 tablespoons olive oil
•1 teaspoon sea salt
•2 tablespoons fresh dill
•2 tablespoons fresh parsley
•1 clove minced garlic
•Dash cayenne pepper

Time estimates
Prep time: 15 minutes
Total time: 1 hour 15 minutes

Directions
1.To remove excess liquid, place diced cucumber in colander, add salt and cover. Set aside for 1 hour.
2.Place cucumber on paper towels and pat dry.
3.In mixing bowl combine cucumber with remaining ingredients. Stir until blended. Season to taste. Serve immediately.
Yield
Makes 1½ cups for an excellent centerpiece to a veggie platter.

Didn't make this recipe yet, but just looking at the ingredients it looks low that we don't have much to worry about calories.
