We did the 'alternative' take on some favorites! Substituting yet not losing any of the great flavors and taste! Hope these spark some ideas or just an interest to try! Have a good SUPER BOWL SUNDAY!
Turkey Black Bean Dip
Ground Turkey - 93/7 lean - 1 lb
Black Beans - Bush's Low Sodium Black beans - 1 can
1 Green Bell Pepper
1 Red Bell Pepper
1 Yellow Bell Pepper
1/2 Red Onion
1 whole medium tomato (cut up into small cubes or shred)
1/2 cup of Kraft Fat-Free Shredded Cheddar Cheese
1/2 container of La Banderita Queso Dip (optional)
1 tsp. of black pepper (OR dash until you are content)
1 tsp. of garlic powder ....
1 tsp. of Italian seasoning .....
Brown turkey meat until done. Add spices (black pepper, garlic powder, and Italian seasoning to meat). Next, add all of the bell peppers, onions, and cubed tomato. Let the veggie and meat mix simmer on the stove for a few minutes and then add Queso cheese and shredded cheddar cheese. Last, add black beans. Let all this simmer for 5 minutes, then let it rest for a few minutes, and IT'S READY! ENJOY!
SN: You can turn this mixture into a layered dip with the black beans...adding a Light Sour Cream. Just blend the black beans until it's almost like paste. Layer a dish pan OR bowl with black bean paste on the bottom, sour cream on top, and turkey dip mix on top of that.
Also, great topping to add to this is a simple guacamole ....1 avocado, lemon juice, lime juice and cilantro (optional)...mash and squeeze in juices and finely chopped cilantro!
TURKEY BALLS
Last year I went crazy on smokies and it wasn't the best situation, but hey..you live and learn! So this year I wanted that same tasty, little meaty treat going on and with some BBQ sauce, but WITHOUT the overkill of calories and sodium!! Mmmm...
1 package of Turkey Sausage links - I used 4 links and made over a dozen balls. However, use however many you need accordingly....the calories are not that bad and the sodium is much better than the typical smokies.
Cut each link into 8 pieces. Sprinkle with Italian seasoning (or seasoning of choice). Roll each piece into balls. Spray PAM on a pan, place balls in pan with enough space between each ball for them to cook and brown on all sides. Use Bull's Eye BBQ (Low sodium and calories) Sauce to sauce the turkey balls OR leave sauce on the side and use toothpicks to pick up balls and DIP in sauce! Saving on the calories and sodium a little there! Also, balls are great to put on Multi-Grain crackers with cheese! Yum Yum! Enjoy!
