Changing my family's eating habits.

Ok so I recently made a decision, and moved back in with my parents. Yes, I know a 26 year old with a full time job living with mom and dad. It was a decision that worked best for me in many ways, as they are boarding my horse and I am there 5 days a week anyways due to work and needing a dog sitter, and to save some $ for a house.
Anyway, moving back in I was asked to be the "cook". I have never cooked for a house full of people before on a daily basis. They don't always eat the healthiest wchich i was was worried about for my diet, however, that was my mom's hope in asking me to do this, change their eating habits to healthier meals.
I work nights during the week, so due to this crazy schedule, I really am not looking forward to cooking 3 days a week, as I will be sleeping. Before I would freeze meals and have left overs. So I am planning out meals as I speak, but for those days that I will not be cooking does anyone have any ideas of what I could do for crock pot recipes? I feel that would be the best bet in this situation where I can't convince anyone to help out.

makes soups and freeze them
make pasta sauce by the bucketfull and freeze in family friendly portions.
try 30 min meals

I have found that making lasagnas (veggie is sooooo good) and freezing them was helpful, I wascooking for a family of four, everyday after work....and on the weekends it can get as big as 10 with family and friends over so I think its easier to google search recipies that kind of have the same ingredients so that I can cook more than one thing at a time. That way I have more control over what goes in :happy: .......It helps if your super busy and have only one or 2 days to get it together....Hope that helps......oooh also try manacotti with reduced fat ricotta...its to live for!!! :bigsmile:0

Sorry I don't have suggests. Just wanted to comment that you are a smart one for staying at home and saving money.
I'm almost 25 and still at home. No shame in that! "They" make it so we have to be in school longer, and then when we get out, there are still no jobs for us. That's what mom and dad are for! I think it's pretty cool that you get to do the cooking. My family would never eat the weird (aka healthy stuff) I eat. :noway:

One of my favorite crock pot recipes is shredded BBQ chicken. I usually by the frozen bags of chicken at the store, thaw them out, put in the crockpot with a bottle of BBQ sauce and some water to make sure chicken is covered. Low for 6 hours, drain, shred chicken and add more BBQ sauce to taste, serve on buns.0
