I am NOT a seafood person, but last night I made some lightly breaded tilapia with brown rice, corn and potato wedges. Amazingly, it was a low calorie dinner

I am addicted to taco salad-not really amazing or romantic, but so delish---useing ground turkey, cook with can of Ro-Tel and can of diced tomatoes, taco seasoning, serve on top of a bed of chopped lettuce , topped with shredded reduced fat cheese and a dollop of light sour cream--its whats for dinner tonight!0

Chili is also amazing on cold winter days like these... plus you can make a big batch and eat on it for days.
Pepperoni soup is also amazing! kind of high in sodium... but under 350 calories for a large bowl including cheese.
-I start cooking a can of Speghetti sauce (double veggies) plus 4 cans of Swanson Chicken Broth, about 6 minced cloves of garlic, half a yellow onion finely chopped, and 1 red pepper cut into small pieces, with a container of Hormel Pepperoni, with Adobo, Black Pepper, and Italian Seasoning to taste in a crock pot on low overnight.
- in the morning add about 1/3 box of whole wheat linguinie broken into 1/4ths to the pot
It is ready by the time I get back on my lunchbreak from work. I add about 1/4 cup of shredded 3 cheese blend
