Found this recipe on the internet and boy is it tasty!! If you cut it into 8 pieces, it only has 243 calories a slice and is very filling!!
1/2 lb. whole wheat lasagne
2 10-ounce packages frozen chopped spinach, thawed
1 lb. soft tofu
1 lb. firm tofu
1 tbsp splenda
1/4 cup skim milk
1/2 tsp garlic powder
2 tbsp lemon juice
3 tbsp fresh minced basil
2 tsp salt
1 32-ounce jar of pasta sauce
Cook the lasagne noodles as the box says. Drain and set aside on a towel. Microwave spinach until thawed. Squeeze the spinach as dry as you can, I mash it between two plates over the sink.
Preheat over to 350 degrees.
Place both tofus, sugar, milk, garlic powder, lemon juice, basil, and salt in food processor and blend till smooth.
Cover the bottom of a 9x13 inch pan with a thin layer of pasta sauce, then a third of the noodles. Follow that with a layer of half the tofu mixture and then half the spinach. Continue using half the remaining pasta sauce, another 1/3 of the noodles, tofu and spinach. End with the rest of the noodles and cover with the pasta sauce.
Bake 25-30 minutes.

I make this regularly and I love it! I double the spinach and kick the milk for a vegan option. I usually just crumble the tofu in (because i'm lazy and hate cleaning my food processor hahaha) but it works out great!
Thanks for posting that!0
