Amazing Chicken Recipe
Hello all,
I've tried this recipe several times and can't get enough of it, soI thought I'd share:
Grilled Rosemary Chicken with tomato-avocado salsa
2 T Olive oil
2 T red wine vinegar
1T chopped fresh rosemary
1T minced fresh garlic
4 (4oz) chicken cutlets
1/4 t black pepper
1/4 t salt
cooking spray
Combine first 4 ingredients in a large heavy duty ziploc bag. Sprinkle chicken with salt and pepper, and add to bag; seal. Marinate in the fridge for 30 min.
Prepare grill
Remove chicken fromt he marinade, discarding marinade and bag. Place chicken on grill rack coated with cooking spray. Grill 3 min each side or until done. Serve with tomato-avocado salsa (recipe below)
Serving size: 1 cutlet and 3/4 cup salsa)

Tomato-Avocado Salsa
1 T chopped fresh oregano
1 T extra virgin olive oil
2 T red wine vinegar
1 minced fresh garlic clove
2 cups grape tomatoes, halved
1/2 cup (2oz) crumbled reduced-fat feta cheese with basil and sun-dried tomatoes
1 ripe peeled avocado, chopped
Combine first 4 ingredients in a large bowl, stirring with a whisk. Add tomato halves, cheese and avocado; toss gently.
Serving size: 3/4 c
calories 132; fat 10.6g; protein 4.2g; carb 6.3g; fiber 3g

Just wanted to say I made this last night and it was AWESOME!! I also made some brown rice as a side dish, which made it more around 500 calories. Yummy! It was really hard to make the salsa and not eat the whole avocado though! I love avocado. I used the leftovers on top of a salad for lunch today!! So good! Thanks!0
