Quinoa Recipes!

Hello everyone. I've never ever tried Quinoa but am going to buy some today & was wondering if ya'll can share with me some recipes for quinoa that you guys cook. Thanks so much :)

    Cook quinoa as usual, drain excess water, add in eggs/egg whites. Cook until quinoa kernels are coated in *cooked* eggs. Add salsa. Mmmmmm

    I cook the quinoa in chicken broth and then stir in corn kernels at the end. The flavors and textures go really well together.

    I have some in the cupboard and didn't know what to do either... so I just made a quinoa meatloaf last week and it was delicious! Look for it on allrecipes.com.

    I second Allrecipies Quinoa and Black Bean's!! It is so so so good!! It's great in a tortilla too!!

    I really like Quinoa and try different things all the time. My latest creation was a Thai inspired dish. So my cooking liquid was chicken broth with some Thai curry paste in it. I also added some fresh ginger. Once the liquid comes to a boil I added a bunch of frozen veggies, spring onions and a small amount of coconut milk. (try not to let the coconut milk boil because it can curdle). reduce heat and let it cook. I eat this alone or sometimes I saute some veggies, fish or shrimp to have with it. YUM!

    I recently made garlic parm quinoa with mushrooms. It was deeeelish.

    I cooked the quinoa & the mushrooms separately. I made mushrooms in foil on my George with olive oil and pepper. When the quinoa was done, I mixed in some garlic powder [fresh would be great, too] and grated some Parmigiano-Reggiano. Then I mixed in the mushrooms. mmmmm

    I just bought quinoa this week for the first time! I have been researching recipes and am excited to try them out. This will be my first recipe and I think it looks really yummy!

    Coconut-Cashew Red Quinoa
    1/2 cup coconut milk, unsweetened
    2 shallots, sliced
    1 small red onion, chopped
    3 cups water
    1 1/2 cups red quinoa, uncooked
    1 tablespoon brown sugar
    1 teaspoon salt
    1/4 teaspoon black pepper
    1 cup frozen or fresh pineapple chunks, unsweetened and chopped
    1/4 cup salted cashews, chopped

    Heat coconut milk in a large saucepan. Add shallots and red onion and cook over medium-high heat for 2-3 minutes. Add water; bring to a boil. Add quinoa, sugar, salt and pepper; cover and cook on low heat for 20 minutes. Add pineapple and cashews and cook for additional 3-4 minutes, or until most liquid is absorbed. Garnish with fresh parsley or cilantro. Serve hot.

    Serves 6 at 3/4 cup each.

    Curried Quinoa Tomato Soup

    1 TBLS EVOO
    2 garlic cloves, minced
    1 yellow onion, finely chopped
    1 celery rib, finely chopped
    2 cups fresh or canned chopped tomatoes
    1 1/2 quarts chicken broth/stock
    1/2 cup quinoa
    1 TBLS cornstarch
    1 1/2 tsp curry powder
    1/2 cup cold water
    salt and pepper to taste
    golden raisins, for garnish

    Heat oil over medium heat. Add garlic, onion and celery and cook, stirring often until onion tender. 5 to 7 minutes.

    Stir in tomatoes, stock and quinoa. bring to a simmer. cover and cook 30 minutes

    Combine cornstarch and curry powder. Stir in the cold water. Stir slurry into soup and bring to a boil. Stir for about 2 minutes or until thickened.

    Add salt and pepper to taste. Garnish with golden raisins

    We had this couple of weeks ago and it was so yummy. Even the four year old liked it. The raisins sound strange, but are so good.
