Baked "spaghetti"

Tonight I'm making this for dinner, thought I'd share.
Roasted vegetables, squash, zucchini, eggplant, sweet potatoes covered in a homemade vegetable marinara, little cheese - baked in the oven till bubbly..........yum!!! Because there is no pasta, I'll have a small piece of garlic bread made w/icbinb spray and a nice big side salad w/light dressing.
I'm so excited!!!

The vegetables have already been cooked - I made a ton and froze them on a sheet pan and then transfered them into ziploc bags so they were not "clumpy". Cut up a ton of vegetables and spray with a mr. mister olive oil sprayer and your choice of seasonings, roast in a very hot oven - like 425 until carmalized.
For the "spaghetti" take the roasted vegs and pasta sauce and bake (covered) in 350 oven till bubbly probably about 20 ish min. - uncover and add cheese and cook untill melted.....yum-o.0 -
