Ive been using kraft fat free mild cheddar and Lifetime fat free mexican cheese. They both melt ok (not great) but the fact they are fat free makes it worth it not being gooey.
  • Kraft..... they make fat free shredded cheddar and fat free american slices

I use them on my veggie eggwhite omlettes in the morning, mealts fine!

I actually use low fat Mozzarella. I buy the generic brand from Walmart (GREAT VALUE SHREDDED CHEESE LOW-MOISTURE PART-SKIM MOZZARELLA CHEESE). And we all know Mazzarella melts wonderfully so it works perfect. I usually eat a breakfast sandwich in the morning, english muffin, egg whites, this cheese, and a turkey sausage patty (or some other type of meat) and its only like 290 calories and it makes you so full and not feel deprived! :)

And its calories aren't bad at all...

    Common serving units

    Carb Protein Fat Calories
    1/4 cup
    0 7 6 80
    2 Tbsp.
    0 4 3 40
    1/2 cup
    0 14 12 160
    1 Tbsp.
    0 2 2 20

Hope this helps! :) Good Luck!

Finlandia makes a few reduced fat cheeses that have been working wonderfully in my paninis. My kids don't even seem to notice!!

leerdammer light, high in protien, low in fat. marvellous (i kept having pizza cravings and now if i have some of this every couple of days, no need for pizza), it tastes like real cheese as well, and is only about 70 calories per slice (large slices and quite thick).
