who has the best low cal recipe for turkey meatballs and tom

mine is simply

get a container of fresh turkey mince, whatever size suits
1 small onion
8 rashers of healthy bacon (which is only the medallion)
4 mushrooms
4 cloves of raw garlic
4 slices of wholewheat bread
40g of low fat cheese (preferably low low or coleraine cheddar)
1 carton of passata
1small tin of tomato puree
1 small bunch of parsley
1tablespoon of cayenne pepper
1 tablespoon of ground black pepper
1 egg white raw

method

make the bread into bread crumbs via a food processor, then empy into a mixing bowl.
throw the turkey mince into the bowl and mix with the bread
finely slice the onion, garlic, mushroom and bacon and mix with turkey and bread
then throw in the egg white and the pepper, and a small amount of rock salt for seasoning.
mix all together, and then make using the palms of your hands small turkey balls.
put on a plate and put in fridge for an hour.

preheat oven to 220 degrees and add on a baking dish with a small drazzle of light olive oil.
i usually do them for about 30-40mins, as they cook very quickly.

the sauce:-

empty the passata into a bowl and add tomato puree and heat, once boiling simmer, then add the cayenne pepper(remember to taste incase its TOO HOT!!)
cut some of the leaves off the parsley and add to sauce, the curled parsley is the best, also cut some of the stems off, and add also, simmer for about 10 mins.

try to time so both the turkey and the sauce are ready at the same time, then use the pasta of your choice.

dunno the calories but it is healthy light and damn delicious!!

    1 1/2 lb lean ground turkey
    1/2 cup finely chopped onion
    1 egg lightly beaten
    1 cup oat bran or breadcrumbs
    2 tbsp fresh parsely
    2 tbsp fresh basil
    2 tbsp fresh oregano
    2 cloves garlic passed though a press
    1 tsp sea salt
    1tsp black pepper

    pre heat oven to 400f

    in a large bowl place egg and breadcrumbs or oat bran. add spices and mix well. *kitten* remaining ingredients and mix well.
    using an ice cream scoop make meat balls and place on prepared cookie sheet. place in oven and bake for 20 minutes or until golden.

    makes 6 servings

  • We buy our turkey meatballs from Trader Joe's. 50 Cal each. Very Good. Add some sauce and NoOoodles. Zero calorie noodles.
