Buffalo Turkey Lettuce Wraps

Made these for the Superbowl and they were a huge hit!

1 1/4 lb ground turkey
1 cup hot sauce (Franks)
1/2 cup carrot (chopped fine)
1/2 cup celery (chopped fine)
1/2 cup onion (chopped fine)
1 tablespoon smart balance
1 tablespoon olive oil
1/4 cup peanuts (chopped)
2 tablespoons garlic (minced)
1 head lettuce (I used iceburg, but you could choose a healthier one)
Salt to taste
optional- blue cheese crumbles or blue cheese dressing

In a pan saute the onion, celery, carrot and garlic in the smart balance and olive oil. When onions are clear add the turkey. When turkey is almost completely cooked add your favorite hot sauce and peanuts- I used Franks Buffalo Wing Sauce.

Let cook for an additional 5-10 minutes until most of the liquid is gone. Place mixture in lettuce leafs. If you would like you can top it off with some blue cheese!

This made about 20 or so wraps. The information below is for about 3 wraps depending on size.

    I made these for my lunch this week. Very delicious, but also very high in sodium. I wonder if there is a low sodium sauce? Either that or I'll use less of it.

    I'm not sure if there is a low sodium sauce, however, I bet you could use less of the sauce and just add some of the spices and flavors that are in the hot sauce. The ingredients are listed below:

    * Aged Cayenne Red Peppers
    * Garlic Powder
    * Distilled Vinegar
    * Natural Flavor
    * Water
    * Salt

    Yummmo!!!! I bet my hubby would love this...he's anti healthy foods!! haah But Franks is one of his staples!
