Buffalo Enchiladas

1 lb of lean ground buffalo
1 medium white onion
1 package of whole wheat tortillas
1 19 oz can of low fat mild enchilada sauce
1 1/2 cups of part skim mexican style cheese ( or other cheese to taste)
Preparation:
Brown Buffalo in skillet. Chop onion and add to browned buffalo. Add about three fourths of the can of enchilada sauce to the skillet. Once combined add 1 cup of the cheese. Take the tortilla and fill with the mixture. Wrap the tortilla up and place in a 9X13 pan for baking. Once you have all 12 tortillas rolled then top with remaining enchilada sauce and cheese. You may also choose to leave the top bare! Bake for 15-20 minutes at 375 degress.
Without the changes to low fat enchilada sauce and part skim mexican style cheese. The calorie count is as follows: serving size one enchilada is 281 calories; 16.2 g protein and 13g fat!

I cant substitute when I make my enchiladas =0( get hubby sick so I have to make mine from scratch with the engridients it suppose to have even though they are so sinfully yummy and very high in cals... (I havent made any in bout a year. LOL!!)0

THANKs for the recipe. Most of our red meat consumed is buffalo, and we're fortunate to live near a buffer ranch. Its very lean!!0
