Roasted Garlic and Sweet Potato Soup (from oxygen mag)

It is a grey winter day here with freezing rain so I am making soup...nice and healthy from oxygen magazine so I thought I'd share it on here 
6 servings (i usually cut it in half)
As per recipe
*290 calories
*3g fat
*59g carbs
*7g protein
I got
220 cal
44g carbs
3g fat
4g protein
so somewhere in there lol
6 large sweet potatoes
3tbsp extra virgin olive oil (i only had becel in the house)
6 cloves garlic
1 large cooking onion (i used a sweet onion)
6 cups low sodium chicken broth (for the veggies i used vegetable broth)
1.5 cups water
oven 350
-Slice sweet potatoes in half and rub with oil, place cut side down on baking sheet
-put garlic cloves on sheet and drizzle with oil
-bake about 45 min to 1 hr till soft
-saute chopped onion
blend all together with broth and water till you get a consistency you like

not quite sure since i usually measure it out with my serving spoon...it was a huge bowl though...I'll measure next time and let you know0

Thanks. I'll make this on Sunday. I've been making a big pot of soup on Sundays and freezing a lot of it for weekly lunch or dinner. It makes things a little easier on me.0
