Muffin Question

I made Banana nut muffins for breakfast today. They were very good calorie wise, only 160 per muffin.
The recipe didn't call for any butter or oil in order to save some calories. But I found that they really stuck to the wrapper. Also they were very pale and didn't have much color.

Would it be worth adding 1-2 tablespoons of oil?

    Maybe some applesauce in place of the oil. Or spray the wrappers with Pam before pouring in the batter.

    did you spray the muffin wrappers with non-stick spray before pouring the batter in?

    No, I didn't spray the wrappers. I'll try it next time.

    actually... i replaced the oil in my bran muffins with applesauce and found the same problem... paper sticking.. BUT... i also found once they had sat in the fridge for a day, the paper peeled off fine that day after they were baked *S*

    was worth the wait for me to not have that extra oil *L*.. means i can have 2 now instead of just one for a snack *L*

    You could spray the muffin pan and not use wrappers. I usually do that unless I am sending the muffins to school for snack day or something like that.

    There is a post on here for banana bread with applesauce that is very low cal and sounds yummn.

    Sadly, my muffins were not as tasty as I would have liked, because of the less sugar and no oil/butter.

    I tried putting them in the fridge. The negative was that it didn't loosen the wrappers and I had to throw one out. The positive though was that it did enhance the natural flavor of the banana, making them a bit more tasty.

    I also found another way to make them tasty!
    Yesterday I ate two muffins and coffee for breakfast, but was hungry after an hour and a half.
    Today I ate one muffin with 1 tbsp peanut butter and a cup of grapes and coffee. The peanut butter helps make them yummy. I am hopeful that eating from 3 food groups instead of 1 will also help me stay full longer.

    i don't use paper wrappers and just spray the pan.
