Southwest Chicken Salad...To Die For!!
2 t. Olive Oil
1 can corn, drained
1 can black beans, drained
1/4 cup chopped onion
1/2 t. garlic salt
1 rotisserie chicken, shredded, or 1 lb. ground beef, browned
1 bag salad
2 roma tomatoes, diced
2 cups shredded fiesta blend cheese
*lime cilantro dressing
flavored tortilla chips
*Heat non-stick skillet on med-hi. Add oil. Toss corn, beans, onion and spices. Saute' until corn is crispy. Add shredded chicken; heat through.
On each plate, layer lettuce and tomatoes. Top with chicken/corn mixture. Add dressing. Top with cheese and crushed chips.
*Lime Cilantro Dressing:
Mix 1 cup ranch dressing with the juice of one lime, add 1/4 c. chopped cilantro. Stir and use on salad.
**Can use 2 lbs ground beef in place of the chicken if you like
ENJOY....my whole family LOVES this...its very easy and delicious!!
** Not sure of the calorie content...you just have to add it all up individually but its sooo worth it!

I enter some of the ingredients in the MFP database under Recipe but I didn't include the crushed chips (no amount given), or the dressing. I also used low salt or reduced sodium corn and beans, and extra lean ground beef (94/6).
I made the recipe for 6 people and I got the following values: 341 calories; 22 carbs; 455 sodium; 19 protein, 7 fat and 7 fiber.0 -
